Summer Garlic Scape Pesto




  If you love pesto, you are going to be over the moon with this recipe.

 

INGREDIENTS

 

6-8 Garlic Scapes

1 Cup Kale packed

1/2 Cup Extra Virgin Olive Oil

Juice from 1 Lemon

1/8 Tsp Salt

1/8 Tsp Pepper

1/4 Cup Pistachio Nuts

 

Prepare the garlic scapes by chopping them into 1-inch pieces.

In a food processor, combine all of the ingredients and pulse until the pesto is smooth but slightly chunky.

This pesto can be used in a variety of ways, but I prefer it on whole grain toasts or blended with chickpeas to make hummus!
