WHAT IS JOLOKIA HOT SAUCE


Jolokia Hot Sauce is made from Bhut Jolokia chili pepper, which has recently become the hottest, but still powerfully ferocious, pepper in the world. This pepper has a number of names, like Bhut Jolokia, Ghost Pepper, Naga Jolokia and Bhot Jolokia. Bhut Jolokia chili pepper is native to northeastern India, Bangladesh and Sri Lanka, but also grows well in new crops in New Mexico. Bhut Jolokia has a dented, very thin skin that is easy to tear and red , orange or yellow in color. Interestingly, the environment has a notable influence on Bhut Jolokia 's power. It has been documented that Bhut Jolokias grown in low humidity and rainfall regions can have up to 50% less heat when measured by the Scoville heat index. In Indian culture, Bhut Jolokia is also used as a homeopathic remedy for stomach pain.


 The Guinness Book of World Records confirmed that Bhut Jolokia, widely referred to as Ghost Pepper and Jolokia Hot Sauce Chili Pepper, was the hottest pepper in the world between 2007 and 2010. Bhut Jolokia has weighed over 1,000,000 units on the scale of Scoville. The scale of Scoville measures the heat of the chili pepper on the basis of the amount of capsaicin present. Capsaicin is the compound responsible for the fire in chili peppers. For contrast, Tabasco sauce measures just between 3,500 and 5,000 Scoville units, Habanero pepper measures 300,000 units, while mere capsaicin measures 16,000,000 units.


Scientists have recently managed to succeed in cultivating the hard-to-grow Bhut Jolokia pepper in America , making Jolokia Hot Sauce more plentiful. Don't be fooled by his word, as Bhut Jolokia and Ghost Pepper are one and the same.

PeaTos snack Review




The coolest box came today, shaped like a briefcase. And to my surprise, inside we're several, very unique style snacks. The company that sent them, over is called PeaTos.


What are PeaTos? Well they are a snack like no other, They are a amazing snack that tastes just like junk food snacks, but made from "PEAS". Yes! "PEAS".


Each bag you taste is crunchy and has a burst of flavor, with a cheesy finger licking residue. These are nothing like I have ever tasted before. They are made with all natural ingredients, with the benefit of protein and fiber in each bite. These unique and tasty snacks have been featured in the Wall Street Journal, Men's Healthy, Forbes, Vogue, and even Fox News, just to name a few.



I know what you may be thinking, a snack out of peas! I bet your thinking all about the taste of that little green veggie. Well it tastes nothing like it. And what's even better, the snacks having peas as their ingredient bring you many nutritional values, such as protein and fiber and so much more!


The first bag the family tasted was the PeaTos Zesty Ranch, a four ounce bag of zesty ranch curls that don't have any pea like appearance. They have such a burst of flavor, and the crunch not like that of a "corn" brand. You will never guess after tasting the PeaTos Zesty Ranch snacks that they are a plant based food. The flavor and the crunch are very different of a "corn" snack, it's better. PeaTos, Zesty Ranch snacks, just like all their products, are non-gmo, and vegan flavored. In each crunchy bite you get the cool ranch taste. These are a great snacks for those watching their waistline, also watching for a great nutritional snack for their kids. There is a slight kick to the Zesty Ranch curls, from PeaTos, but still kid friendly. This little bag of munchies are great for on the go snacks.


The next bag to open and taste, was PeaTos Fiery Onion Crunchy Rings. These were very delicious. In each bite, you get a zesty, tangy, hot kick. PeaTos Fiery Onion Crunchy Rings, are made with the same ingredients, including "PEAS". The heat for the snack comes from a fiery hot onion seasoning. And you really do get a onion taste, with a kick of heat. PeaTos make a great alternative, to any type of chips.


Bag number three from PeaTos is their Classic Cheese flavor. These are cheese curls, that truly taste like good cheddar cheese. It’s a great FYI, that there are few carbs in this bag, and very little sugar. Truly is a great all natural snack, that makes you feel good feeding them to the family. You still get a cheesy snack, with great crunch texture, but with much better healthy ingredients. The flavor of PeaTos Classic Cheese flavor curls will not disappoint you. If you are a junk food eater, these snacks will not take that opportunity away from you, you'll never know the difference.


Now we move on to bag number four, from PeaTos. These are their Classic Onion Rings, also packed with protein, and fiber, from the Pea Plant ingredients. You get a taste of not only savory flavors, but a hint of sweetness in every bite. These snacks are great for those choosing to eat organic foods. They have fewer calories, and obviously are a much better healthy choice. You get the taste of onion, similar to eating a real homemade onion ring you would make at home.


PeaTos also sent over in the box, a bag of their Crunchy Hot Curls. And they also are made with "PEA" plant based ingredients. This is a powerful bag of flavor, and fun to eat snack. The heat comes from a fiery hot seasoning that PeaTos, uses. If your craving the hot taste of a crunchy snack this is a great alternative. The bite gives you a tangy, Smokey flavor, similar to eating a BBQ curl. The heat level is pretty high, but nothing that will bring tears to your eyes. The texture of PeaTos are airy and crisp, and it makes it hard to eat just one. I didn't just eat these out of the bag, I topped a cheeseburger with them for some extra crunch and heat. You can use these curls, or rings from Peatos in other recipes if you want to experiment. I would try the rings, either flavor as a topping for mac n cheese.

Homemade Apple Butter



Apple Butter, its easy to make, and is great on just about anything, warm or cold.

Here's what you will need:

½ bushel apples
4 pounds sugar
2 Tablespoons ground cinnamon
¼ teaspoon ground allspice
½ teaspoon salt
¼ cup red hots candies

Preheat the oven to 325 ° C. Peel and quarter apples and roast in the Dutch oven over low heat until soft. Juice is going to form. Transfer the apple sauce to a large roaster and add the remaining ingredients, blend well.

Bake uncovered, stirring regularly, until it is warm. Place in jars according to manufacturers canning instructions and heat in a boiling water bath for 5 minutes to seal.

This is going to produce around 8 to 10 pints.

Note: Red hot candy, will bring taste and color to apple butter.

Fattening Up Your Sauce







If you have any type of sauce that needs to be thicker, I love the beurre manie method. It's fast and easy, and when you add it to your sauce you do not get a flour taste.


Beurre maniΓ© is a pastry, composed of equal parts by volume of soft butter and flour, used to thicken soups and sauces. The flour particles are covered in butter by kneading the flour and butter combined.

If the flour has been completely blended, add it to the sauce in tiny pieces at a time and mix until mixed.

Start off with 1 tablespoon of all-purpose flour and 1 tablespoon of softened butter. It's best to leave the butter for an hour or so before you start. Don't make the butter a microwave.

It's not pretty, but as soon as the flour is applied to the butter, the beurre manie is able to slide into stews, soups and sauces. Make sure to start whisking the broth or sauce until the beurre manie has been fully blended into the dish.

You'll want to do a taste test to make sure that you're not able to taste the flour if it hasn't been mixed in completely. Once you can no longer taste the flour and attain the desired thickness, your sauce is ready.


You can freeze a manie of beurre for up to three months. As most recipes only call for a tablespoon or two of this ingredient at a time when you can freeze whatever you don't use. It can also be generated in big quantities and frozen. 

However, it is important to allow the mixture to soften completely before adding it to the soup. I do not recommend the addition of frozen beurre manie to a hot dish.

At the end you will have a great sauce not only thickened the way you wish, but one with a lovely shine.
