Banner Road Baking Company organic granola Review





From Banner Road Baking Company, I got six containers of homemade artisan Granola. And it comes from a great start.


The beginning of this company, starts from spending summers on a farm in Oklahoma, to developing a love for becoming a chef. Anne Croy, founder of Banner Road Baking Company creates organic granola's, in many natural flavors. And also gives back to the Usher Syndrome Coalition, that helps grow awareness to research. A percentage will go to this great cause from profits, from Banner Road Baking Company. And that's a great thing! The Banner Road Baking Company has been recognized in the press by Good Morning America, Food & Wine magazine, and many others. So I was very excited cooking and tasting them.


These handmade organic granola's are made with organic natural ingredients. They all have great flavor profiles, and are herbicide free, pesticide free and genetically modified ingredients. There's organic grains, fruits, and seed in each container. All melded in perfect harmony. And with the percentage of profits, support has been given for research for 400,000 individuals that suffer from deafness and blindness, called Usher Syndrome, just like Chef Anne's own daughter has. So you are not only getting a great tasting organic granola, you are helping a great cause, that is dear to Chef Anne's heart.

So let me tell you about my day with these handmade organic granola's and what I made to eat with them.




With some of the first container, called Oh Snap, which is a organic granola of ginger plus molasses, I made some pancakes for breakfast. This container is gluten free, has seven grams of sugar per serving, is vegan plus honey, and non gmo. Pulsing the granola slightly and then adding it into the pancake mix, was a delicious healthy breakfast. There's a lot going on as soon as you open the container. You see the yummy granola, and receive the aromatics. Not only is it a healthy breakfast option, it is a great snack as well. It created a ton of flavor to my pancakes, with a nice texture to. The ingredients are, Organic gluten-free rolled oats, organic tapioca syrup, organic extra virgin olive oil, organic pumpkin seeds, organic almonds, organic quinoa, organic crystallized ginger, organic molasses, organic flaxseed meal, water, organic honey, organic puffed buckwheat, organic balsamic vinegar, organic spices, sea salt, organic black pepper. There is no holding back on size of the ingredients either, the almonds are a nice bite size. It not only gave my pancakes flavor but color as well.




The next container, again I made some pancakes, by slightly processing them in my pancake mix. The ingredients really carry over into the mix so you can taste them. The granola mix from Banner Road Baking Company is made up of these delicious ingredients, Organic gluten-free rolled oats, organic extra virgin olive oil, organic tapioca syrup, organic honey, organic peanuts, organic pumpkin seeds, organic almonds, organic quinoa, organic sesame seeds, organic banana extract, organic puffed millet, organic banana powder, organic peanut butter, water, sea salt, vanilla extract. On top of the pancakes I added some bananas and more granola for a topping and a drizzle of honey. Breakfast was a great hit with the family. You get a natural sweetness from the granola with a nice crunch. There is a load of seeds, and almonds in the blend, and that sweet crunch is from local honey. This blend is Monkey Suit, and theres no monkey business going on here.




I decided with the canister from Banner Road Baking Company, The Original, to make some granola cookies. And I was glad I did. Every bite of the cookies I was able to taste the wonderful ingredients that made up the blend. In the container was, Organic gluten-free rolled oats, organic tapioca syrup, organic extra virgin olive oil, organic maple syrup, organic pecans, organic dried tart cherries, organic pumpkin seeds, organic almonds, organic quinoa, organic sesame seeds, organic coconut chips, water, sea salt, organic spices, vanilla extract. Each bite gave you a nice natural sweetness, and a nice crunch again, from the seeds, and the nuts. Then you have a nice amount of tart cherries that give it a little chew. This is a nice authentic flavored granola, that as soon as you open the canister, it invites you in to start tasting it. This is a extraordinary delicious homemade granola, that is healthy and diet friendly for everyone, especially those who have special dietary needs.




I was having a blast, cooking and incorporating these granola's from Banner Road Baking Company, and decided for the KickStart, to use it in a bread recipe. It doesn’t matter if you pulse it some to incorporate into a recipe, you still get the flavor profile, the crunch and the sweetness. This container was full of, Organic gluten-free rolled oats, organic tapioca syrup, organic extra virgin olive oil, organic pumpkin seeds, organic almonds, organic quinoa, organic date sugar, organic sesame seeds, Askinosie natural cocoa powder, organic puffed brown rice, espresso ground coffee beans, water, sea salt, vanilla extract. Every bite you take, you can taste the time and love put into developing these blends. And the best part, if you love coffee and you love chocolate, this is the blend that will party on your taste buds. Simple natural organic ingredients that pack a powerful taste to your palate. There are many whom have to follow a specific diet, now with Banner Road Baking Company, organic granola's, you can have a diet friendly breakfast, snack, or salad topping, guilt free, and worry free. They make sophisticated recipes that the whole family will love. If you love blueberries, you will enjoy this blend, along with the other ingredients of, Organic gluten-free rolled oats, organic tapioca syrup, organic extra virgin olive oil, organic maple syrup, organic walnuts, organic pumpkin seeds, organic almonds, organic quinoa, organic dried blueberries, organic sesame seeds, organic puffed millet, water, sea salt, organic spices, vanilla extract. The English walnuts, really stand out along side of the fruit, in the bars, with a natural sweetness and plenty of crunch. The granola is not only great on calories, but has a ton of nutrients in every bite.




With Banner Road Banking Company, Midnight Snack, I ended the cooking with some yummy tasting muffins. Every bite of the muffins yielded the ingredients of the granola blend, with ingredients of, Organic gluten-free rolled oats, organic tapioca syrup, organic honey, organic extra virgin olive oil, organic cashews, organic sultanas raisins, organic pumpkin seeds, organic coconut milk, organic almonds, organic quinoa, organic sesame seeds, organic coconut chips, organic sweet potato powder, water, sea salt, organic garbanzo bean powder, organic spices, organic turmeric. And if it was necessary to get up at midnight for a snack, this would be a guilt free way to go. From the cluster of oats, to the Indian spices, this is truly nectar to your lips. It was just amazing, even cooked in a muffin.

All of Banner Road Baking Company organic granola's are delectable. You can eat them out of the canister, as a cereal, on top of your favorite yogurt, or even in a smoothie. However you choose, you will be satisfied.

Sweetsmith Candy Company Review





I received some great sweets today, from the company Sweetsmith Candy Company.


This company is the true meaning of starting from the bottom up. From saving money selling newspapers, to peanuts brought over by Grandma, to the business it is today. Dannah Davies, knows the struggles, and with a family recipe she committed to her memory, Sweetsmith Candy Company was born. She took that family recipe and turned Brittle's and other candies, into a handcrafted business. Even with those who said it could not be done, it just gave her more drive. And today Sweetsmith candy can be enjoyed by all.

So let me tell you how these sweet treasures tasted!



The first box was traditional peanut brittle, that is just everyone's favorite. Just like Grandma used to make, it’s a fantastic, mouth watering brittle. One bite and your going to be hooked. The peanut brittle is gluten free, egg free, soy free, vegan and also dairy free. For those who have a problem with dairy, this Traditional Peanut Brittle is a wonderful snack. It is also made with Isomalt, which is a sugar substitute so it’s a great snack for diabetics as well. Isomalt is a type of sugar alcohol primarily for a sugar like physical state. What's great is that it will not promote tooth decay, so it’s a sweet treat that is tooth friendly. The peanut brittle from Sweetsmith, is covered in wholesome peanuts, that gives you not only a nice crisp brittle, but one that melts in your mouth.      
The box's that the candies come in are ready for gift giving, also they would look great in a gift basket.



Now for those of you whom love English Toffee, Sweetsmith Candy Company, has that to. A handmade with love type of candy! A English Toffee, that has fresh roasted peanuts and a mouth watering Belgian chocolate, until you get to the buttery toffee layer, that is extraordinary. In each bite you take, it just reminds you of being in the kitchen with Grandma making Toffee for the Holidays. One bite and you taste the love, and passion that went into making the English Toffee. A real sweet treat, you can't get enough of.



The next flavor is a new one for me, from Sweetsmith, it is Groggnog Brittle. It is flavors of eggnog, but yet egg less, with a flavor profile of Jamaican rum, and vanilla, and nutmeg. And if you thought that was it, there is more nutmeg sprinkling on top. This is a great Brittle to serve for Xmas. A very festive Brittle.



How about Strawberry Shortcake Brittle, Sweetsmith has that flavor as well. A nice sponge toffee brittle that is topped with a ton of white Belgian chocolate and fresh strawberries, that were freeze dyed. This brittle will wake up your taste buds with its refreshing sweet taste. The white Belgian chocolate is nectar to your lips.



Here's a great brittle that is a wonderful treat for those on special diets. It’s the sugar free, keto, coconut brittle. Every bite you get the taste of the fresh toasted coconut. And the brittle is again made with the all natural Isomalt. The nice crispy coconut brittle is just divine. And on each piece you see the toasted coconut, and the peanuts, there was no skimming done on this brittle. A wonderful tropical flavor, that takes you away to the islands.



Now who doesn't love cookies n cream anything. Well Sweetsmith has some, and it’s a nice biscuit et crème. A crunchy delicious candy bar, with zero sugar. Now you get to have your cookies and sweet treat in one. The flavor is so lip smacking, you will not want to stop. Made with the sugar substitute Isomalt as well, so very diabetic friendly. It's smaller then other candy bars, but bigger in flavor.

Proudly Pure Product Review



From Newport Beach, CA, I received some great products, that I incorporated into lunch and dinner, and a snack in after we were all done.


Proudly Pure creates products, that are not only great tasting, but nutritious as well. From coconut oil to salt and pepper, they make great tasting products with real ingredients.



The first product I used was the Proudly Pure, Rosemary and Thyme Parmesan Crisps. I finally blended them to make a coating for a chicken breast for lunch. It was really good, and using the air fryer to do the cooking keep the parm crisp coating on perfectly. You could still taste not only the parmesan crisp, but the rosemary and thyme as well. It was a great coating for the chicken breast, but would also be good in other recipes as well, or straight out of the box.


The Parmesan crisps are all made with one hundred percent natural aged parmesan cheese. There's nothing artificial used at all, no fillers, no wheat, and no gluten. You can eat them right out of the box, or do like I did and get creative. They are great for everyone, especially watching your carb intake. Take them on the go as a grab and go snack! A great product to showcase for a dip, for the Holidays, or any get together. You can use them as a alternative to many other foods, such as chips, cheese curls, croutons, and unhealthy snacks you may be munching on. Also they would make a great crunch for a burger, or serve with your favorite soup. The ideas are endless for sure! Crackers, yep they are a great alternative for them as well.



Before dinner I made two appetizers, the first was using the Proudly Pure, Garlic, onion, sesame, poppy seed parm crisp and breaking it into small pieces to garnish my lobster deviled eggs. It was the perfect compliment to this appetizer. I made them small enough so when you took a bite of the lobster deviled egg, you got the parm crisp as well. The flavor profile of the parm crisp, carried onto the lobster and egg, giving a garlic, onion flavor.



The next appetizer, I went in a different direction. I took the Proudly Pure Parmesan crisp, melted fresh parmesan on top, with a slice of jalapeno. The flavor of the Parmesan crisp itself was Jalapeno, so you got double the flavor of the pepper. It was scrumptious. The parmesan crisp itself held up beautifully, being baked with cheese on top. They didn't last long at all, a very finger licking good appetizer.



With the Proudly Pure, Parmesan crisp, that was the original, I used them in place of croutons for a Caesar salad. Again, they held their own, even with dressing on them. They stayed crisp and tasty. No matter what I threw on them, the cheesy flavor and the crispness stayed true. The parm crisp would look so elegant on a cheese board for special occasions. But also make a great snack any time of the day.



Along with the Parmesan crisps from Proudly Pure, I received a jar of coconut oil, in which I used to sear some tuna steaks. The coconut oil is unrefined and cold pressed. You can also use it to soften your skin, or as a hair care product. It's healthy for cooking, and a very versatile product. Cooking with coconut oil is great, because it is cholesterol free, and is heart healthy. The coconut oil from Proudly Pure is also organic, and is safe for all types of diets. It was a great choice for the tuna steaks, they came out beautiful and did not burn. Coconut oil is great for searing, or sautéing. And if you’re a baker, it is a wonderful substitute for butter. The coconut oil also has a very neutral taste, and does not taste like coconut at all.


After a while the entire family enjoyed some of the Proudly Pure mini bite size keto chocolate chips cookies. They were great with a nice glass of cold milk, just like when you were a kid. There is no sugar in the cookies so they are great for everyone, especially those that have to watch their sugar intake. Also they are made with real ingredients, that you can understand when reading the label. They are a great snack to take on the go, or pack in your lunch, they are just the right size mini bite. A wonderful yummy guilt free snack that provides you with a healthy alternative to other sugary cookies. The cookies have a nice fresh taste, and a crispy chew, and hold up great for dunking!

Country Ham with Red eye Gravy








1 pound country ham, sliced thin
2 slices thick slab bacon
1 teaspoon sugar
1/2 cup warm water
1 tablespoon strong black coffee
Grits for serving
Buttermilk Biscuits for serving

When you use standard cured ham instead of old-fashioned true Country Ham, you can omit to soak the ham overnight, soak it if it is salty. Cut the fat from the ham and put aside. Split the ham into pieces, each around 3 by 4 inches. Place the ham in a wide tub, cover with cold water, and cool overnight.

Before cooking, wash, clean and dry the ham. In a big cast iron pan, fry the reserved ham fat and bacon only, if your ham does not contain sufficient fat to create at least 2 tablespoons of fat, until browned and crispy. Transfer the browned pieces to the paper towels to drain.

Fry the ham in a single skillet, rotating regularly, until well browned on both sides.  When each batch is done, drain  paper towels and keep warm.

Remove the skillet from fire and gently remove all but one tablespoon of the oil. Return to medium flame, whisk in the sugar. Cook , stirring continuously, until the sugar has dissolved and starts to caramelize for about 30 seconds.

Start adding the warm water to the skillet and stir until well melded. Cook for 1 minute, stirring and scraping the bottom of the skillet to loosen any browned pieces. Apply the coffee to the skillet and whisk until well mixed.
