Carrot Cake Jam




Jam for carrot cake: A very tasty and simple jam recipe that incorporates the classic dessert's favorite carrot cake flavors.


Ingredients

1/2 cup apple juice

3 large carrots, grated (about 2 cups grated carrots (packed)

2 large pears or apples, diced small

2 cups fresh pineapple, diced small

1 1/4 cups chopped golden raisins

4 tsp cinnamon

4 tsp ground ginger

2 tsp ground nutmeg

1/2 tsp cloves

4 cups white sugar  

2 cups brown sugar

1 pkg powdered pectin, 2 ounces

Instructions

In a big saucepan or Dutch oven, combine all the ingredients EXCEPT the sugars and pectin. Stirring periodically, simmer for 25 minutes over medium-low heat.

White sugar, brown sugar, and pectin are all added at once. The mixture is then brought to a boil for one or two more minutes.

For the pectin to set effectively, the mixture's temperature must be at least 220 degrees Fahrenheit.

Only 1/4 of an inch should remain at the top of the jar when you ladle the jam into previously sterilized Mason jars.

Add the lids and give the bottles a 10-minute water bath, as directed by the manufacturer.

Vegan Red Beans and Rice Stuffed Peppers




These vegetarian stuffed peppers are the ideal option for a quick supper that can be prepared in advance. They are bursting with flavor, nutrients, and filling red beans and rice. You'll taste some Cajun characteristics in this, and you'll like having yet another use for a can of red beans!


INGREDIENTS

4 large red bell peppers

2 tablespoons olive oil

1 small onion, diced

2 stalks of celery, finely diced

6 cloves garlic, minced

2 teaspoons Cajun seasoning

1 teaspoon dried thyme leaves

1 teaspoon dried parsley

2 teaspoons Worcestershire sauce

1 cup crushed tomatoes

2 cups cooked rice

1 15-ounce can of red beans

2 green onions, sliced

1 cup grated mozzarella cheese

Set the oven's temperature to 350 degrees Fahrenheit. Slice the peppers in half after giving them a good rinse. In a baking dish, arrange the interiors after removing them.

Olive oil should be heated in a small skillet over medium heat. When the oil is hot, add the celery and onion, which have been finely diced, and simmer for about 10 minutes while stirring occasionally. Add all of the garlic powder and Cajun seasoning next. Just long enough to release flavors, stir and cook for 30 seconds. In a large bowl, combine the skillet's contents with the remaining ingredients. Each of the 8 bell pepper halves will receive an equal amount of the rice and bean combination. Cheese should be sprinkled over the peppers.

Bake for 30 minutes with a piece of foil over the pan but not touching the peppers.

Once the foil is removed, bake the cheese for an additional 5-8 minutes, or until it turns golden.

Roasted Okra Chips



Okra is a contentious vegetable.  The majority of Southern dishes either embrace the slime and use it to thicken gumbo and stews or they try to hide it by coating slivers in cornmeal for a deliciously crisp fried crust.


Ingredients

20 okra, 3 cups, sliced vertically or horizontally

2 tablespoons oil, vegetable

1/2 teaspoon salt

1/2 teaspoon pepper

heat the oven to 350 degrees

Sliced okra should be gently mixed in a large basin with oil, salt, and pepper. Okra should be placed on a baking sheet with a rim and baked for 10 to 15 minutes. Midway through the cooking process, flip the okra to the opposite side. Depending on the width of the slice, the okra will take a different amount of time to cook overall. When crisp, remove from oven and transfer to paper towel. You can refrigerate any leftovers. Even though they won't be as crispy, you can reheat them.

Air Fryer BBQ Pork Riblets



Fantastic game day meal, or snack. Everyone will think you cooked for hours.


Ingredients

3/4 cup water

1 lb. bone-in St. Louis pork sparerib portions (cut 1 to 1½ inches thick)

1 Tbsp. Kansas City style barbecue seasoning rub canola oil cooking spray

2/3 cup barbecue sauce 

Put water in the air fryer pan's bottom (underneath the basket). In accordance with the manufacturer's instructions, preheat the air fryer to 350°F.

Cut the rib meat between the bones into 1- to 112-inch pieces and set in a big basin while you wait. Toss the rib pieces with the barbecue seasoning to ensure an even coating. Cooking sprays the rib pieces lightly and toss.

Cooking spray should be lightly applied to the air fryer basket. Fill the basket with the rib pieces. Apply cooking spray sparingly to the tops of the pork chunks. For six minutes, cook. Shake or toss the rib pieces in the basket while lightly misting them with cooking spray. Cook for a further 12 minutes, shaking or tossing the rib pieces every 6 minutes.

Brush some of the sauce lightly over the rib pieces, and simmer for 1 to 2 minutes, or until the sauce begins to slightly caramelize. Place the rib pieces in a basin, then stir in the remaining sauce. Await 3 to 5 minutes of cooling before serving.

Domestic BBQ Seasoning: Mix 2 teaspoons of packed dark brown sugar, 3/4 teaspoon of smoked paprika, 1/2 teaspoon of garlic salt, and 1/8 teaspoon of ground black pepper in a small bowl. 1 tablespoon is made.
