Apples plus rutabaga, a golden-colored root vegetable, are mashed together velvety smooth. This has a beautiful hue and is a great side dish.
2-1/2 pounds rutabaga
3 medium cooking apples
2 tablespoons butter
1 tablespoon maple syrup
salt & pepper
Prepare a big saucepan with enough water to cover the rutabaga &
apple, and then bring it to a boil on MEDIUM HIGH.
Prepare the rutabagas by themself first. Once the water is heated,
remove the rutabagas' thick skin and divide the meat into half-inch pieces. Add
the rutabaga to the water that is boiling and bring it back to a boil. Reduce
the heat to MEDIUM, covering, and let it simmer till soft, approximately twenty
minutes.
Following that, add the apples for the final cooking. In the meantime,
peel and cut the apples. After the rutabagas have softened, add the apples and
simmer for another ten minutes.
PROCESS until SMOOOTH Strain the water with a colander & move the
rutabagas & apple to a food processor. Add the butter then maple syrup, and
blend till smooth. Test out the butter & maple syrup, next season with salt
and pepper. Serve quickly.
