Instructions
Preheat oven to 350°F (175°C). Grease a 9x5 inch loaf pan.
Combine ingredients: In a large bowl, combine the ground
chicken, breadcrumbs, milk, onion, egg, 2 tablespoons of ketchup,
Worcestershire sauce, thyme, salt, and pepper. Mix well with your hands or a
spoon until all ingredients are evenly distributed.
Transfer to pan: Press the mixture into the prepared loaf
pan, ensuring it's evenly distributed.
Prepare the glaze: In a small bowl, whisk together the 1/2
cup ketchup, brown sugar, and Dijon mustard.
Glaze the meatloaf: Spread the glaze evenly over the top of
the meatloaf.
Bake: Bake for 50-60 minutes, or until the internal
temperature reaches 165°F (74°C).
Rest and serve: Let the meatloaf rest for 10 minutes before
slicing and serving. This helps it retain its juices and makes it easier to
slice.
