Instructions:

 

In a bowl, whisk together soy sauce, brown sugar, rice vinegar, cornstarch, ginger, and garlic.

Add the pork to the marinade and toss to coat. Let it marinate for at least 30 minutes, or up to 2 hours.

Preheat a large skillet or wok over medium-high heat.

Add the marinated pork to the skillet and cook until browned on all sides.

Add the pineapple and red bell pepper to the skillet and cook until the pineapple is slightly softened and the pepper is tender-crisp.
