Ingredients:

  • 2 tablespoons olive oil
  • 1 small yellow onion, finely diced
  • 2 cloves garlic, minced
  • 1 carrot, peeled and finely diced (optional, for extra veggies)
  • 1 teaspoon fresh rosemary, minced (or ½ tsp dried)
  • ½ teaspoon fresh thyme leaves (or ¼ tsp dried)
  • ¼ cup dry white wine or vegetable broth (for deglazing)
  • 2 (15-ounce) cans cannellini beans (white kidney beans), rinsed and drained
  • 1 cup vegetable broth
  • ½ cup heavy cream (or plant-based cream for a dairy-free version)
  • ¼ cup grated Parmesan cheese (omit for dairy-free)
  • Salt and freshly ground black pepper to taste
  • For the topping:
    • 2 tablespoons panko breadcrumbs
    • 1 tablespoon grated Parmesan cheese (omit for dairy-free)
    • 1 tablespoon olive oil or melted butter (for dairy-free, use olive oil)
    • Pinch of dried parsley (for color)

Instructions:

1.    Preheat & Prep: Preheat your oven to 375°F (190°C). Lightly grease an 8x8 inch or similar sized baking dish.

2.    Sauté Aromatics: Heat the olive oil in a large skillet or oven-safe pan over medium heat. Add the diced onion and carrot (if using) and cook, stirring occasionally, until softened, about 5-7 minutes.

3.    Add Garlic & Herbs: Stir in the minced garlic, fresh rosemary, and fresh thyme. Cook for another minute until fragrant.

4.    Deglaze: Pour in the white wine or vegetable broth, scraping up any browned bits from the bottom of the pan. Let it simmer for 1-2 minutes until slightly reduced.

5.    Build the Gratin Base: Add the rinsed and drained cannellini beans, vegetable broth, and heavy cream to the skillet. Bring to a gentle simmer, then reduce heat to low and cook for 5-7 minutes, allowing the flavors to meld and the sauce to thicken slightly.

6.    Cheese & Season: Remove from heat. Stir in the ¼ cup of grated Parmesan cheese until melted and smooth. Season generously with salt and freshly ground black pepper to taste.

7.    Transfer (if needed): If your skillet is oven-safe, you can proceed directly. Otherwise, transfer the bean mixture to your prepared baking dish.

8.    Make the Topping: In a small bowl, combine the panko breadcrumbs, 1 tablespoon Parmesan cheese, 1 tablespoon olive oil or melted butter, and a pinch of dried parsley. Mix well until the breadcrumbs are evenly coated.

9.    Bake to Golden Perfection: Sprinkle the breadcrumb topping evenly over the bean mixture. Bake for 25-30 minutes, or until the gratin is bubbly around the edges and the topping is golden brown and crispy.

10.Rest & Serve: Let the gratin rest for 5 minutes before serving. This allows it to set slightly. Serve warm as a main dish with a green salad, or as a hearty side.
