  • 6 cups vegetable broth (low sodium preferred)
  • 1 cup diced potatoes (Yukon Gold or red potatoes work well)
  • 1 cup chopped kale or spinach
  • ½ cup green beans, trimmed and cut into 1-inch pieces
  • ½ cup frozen peas
  • Salt and freshly ground black pepper to taste
  • Optional garnishes: fresh parsley, a swirl of pesto, crusty bread for serving

Instructions:

1.    Sauté Aromatics: Heat the olive oil in a large pot or Dutch oven over medium heat. Add the chopped onion, carrots, and celery. Cook, stirring occasionally, until softened, about 8-10 minutes.

2.    Add Garlic & Herbs: Stir in the minced garlic, dried thyme, and dried rosemary. Cook for another minute until fragrant, being careful not to burn the garlic. Add the bay leaf.
