New Orleans Chicken

 


This is a beloved chicken meal in my family. It's simple, and everything is prepared in a single pot.

 

yields 8 servings

Ingredient Checklist

1 (3 pound) whole chicken, skin removed and cut into pieces

cup all-purpose flour

1 tablespoon vegetable oil

½ pound smoked sausage

2 cloves garlic, minced

1 onion, chopped

2 red bell peppers, chopped

3 roma (plum) tomatoes, chopped

1 teaspoon brown sugar

¾ teaspoon dried thyme

¾ teaspoon dried oregano

½ teaspoon salt

¼ teaspoon ground allspice

1½ cups long-grain white rice

2¼ cups chicken stock

1 tablespoon chopped fresh parsley, for garnish

1 lemon - sliced, for garnish

 

Coat the chicken in flour, flipping to coat well.

Heat the oil in a large pot or Dutch oven over medium heat. Brown the chicken pieces for about 8 minutes on each side. Place on a platter.

In a large skillet, blend the sausage, garlic, onion, peppers, tomatoes, sugar, thyme, oregano, salt, and allspice. Cook for 10 minutes, stirring periodically, over medium heat, or until peppers are soft.

 

Toss in the rice and stock. Tuck the chicken into the rice. Bring the water to a boil. Reduce heat to low and cover. Cook for 20 to 25 minutes, or until the liquid has been absorbed and the juices flow clear when the chicken is punctured. Garnish with parsley before serving. If desired, garnish with slices of lemon.

Fall Quinoa Salad with Poppy Seed Dressing

 


Salad with roasted sweet potatoes and Brussels sprouts, beets, dried cranberries, quinoa, feta, and poppy seed dressing. A simple and delicious fall meal that everyone will appreciate.

 

Ingredient Checklist

nonstick cooking spray

Salad:

1 medium sweet potato, peeled and chopped

½ cup sliced Brussels sprouts

2 tablespoons olive oil

salt and ground black pepper to taste

1 cup cold cooked quinoa

1 (8 ounce) can sliced beets

cup sweetened dried cranberries

 

Poppy Seed Dressing:

½ cup white vinegar

cup white sugar

1 tablespoon minced onion

1 tablespoon poppy seeds

1 teaspoon salt

1 teaspoon dry mustard

½ cup crumbled feta cheese

 

Heat the oven to 475° F. Coat a baking sheet with nonstick cooking spray.

Place the sweet potato and Brussels sprouts on a baking sheet that has been preheated. Season with salt and pepper and drizzle with olive oil.

Roast in a preheated oven for 15 to 20 minutes, or until the vegetables are soft and gently browned, monitoring every 5 minutes to ensure they don't overcook. Remove from the oven and set aside for 15 to 20 minutes to cool.

 

While the vegetables cool, combine the quinoa with the beets and cranberries in a mixing dish.

In a mixing bowl, combine the vinegar, sugar, onion, poppy seeds, salt, and dry mustard for the dressing.

Cooled veggies should be included into the quinoa mixture. Gently fold in the dressing and feta cheese. It can be served either warm or cold.

Midwest Salisbury Steak

 


If you use nice ground sirloin, it will taste great and there will be no fat to drain from the patties once they've cooked. Serve with mashed potatoes, egg noodles, or rice as a side dish. Simply delectable!

 

Original recipe yields 5 servings

Patties:

1 pound ground sirloin

½ cup panko bread crumbs

1 egg, beaten

2 tablespoons milk

½ (1 ounce) package dry onion soup mix

1 teaspoon Worcestershire sauce

¼ teaspoon ground black pepper

 

Gravy:

3 tablespoons butter

2 cups fresh mushrooms, sliced

1 sweet onion, sliced

3 tablespoons all-purpose flour

½ (1 ounce) package dry onion soup mix

1½ cups beef stock

1 cup water

salt and ground black pepper to taste

 

In a large mixing bowl, combine ground sirloin, panko bread crumbs, egg, milk, and 1/2 package onion soup mix, Worcestershire sauce, and black pepper; form into 5 patties.

Melt butter in a pan over medium heat. Cook patties in a heated skillet for 3 to 5 minutes per side, or until browned.

 

In a separate pan, melt the butter over medium-high heat. 5 to 7 minutes, sauté mushrooms and onion in heated butter until soft. Cook and whisk the flour and leftover dry onion soup mix into the mushroom mix until the flour is well incorporated, about 1 minute. Stream in the beef stock and water while constantly stirring over the mushroom mixture; bring to a boil, lower heat to medium, and cook, stirring regularly, until the liquid thickens, approximately 5 minutes. Season with salt and pepper to taste. Place the browned steaks in the gravy and cook for 30 minutes, or until the steaks are firm and gray in the middle. An instant-read thermometer put into the middle should show a temperature of 160 degrees F.

The Sasquatch Coffee Review

 


Oh how I love my coffee, and today I got to try a new brand.




The company is, The Sasquatch Coffee Company, from the Oregon coast. The coffee company makes their coffee in small batch's which ensures not only freshness but quality. The Sasquatch Coffee Company micro roasts their high quality coffee, that comes out with a nice smooth taste.




They hand select their beans, which grown from regions all around the world. So you know your getting some really delicious coffee.





My first cup was with breakfast, and it was very luscious on the palate. It is a wonderful medium roasts, with blends of flavor from Brazil, Central America, and the Pacific Islands. You get a nice almond taste and aroma, with a light body and low acidity. Then at the end a nice chocolate taste, very elegant in every sip. The name of this blend is, Ape Canyon, a nice unique coffee with robust and sweet flavors at the same time.





For dinner I also made a nice marinade with the coffee for my ribs. The flavor profile was just as amazing as drinking a cup. The coffee marinade made the ribs super tender, and so full of flavor, right down to the bone.





As a night cap, I made everyone some hot cocoa, in face it was, The hot Squatch O Late, salted caramel cocoa. It was a nice finish to a brisk cool evening. If you love cocoa and the flavor of salted caramel, this hot cocoa is the one to try. Its smooth and rich and very luscious. A great way to end a perfect evening.
