Scrambled Eggs, Cheese, and Avocado Tortilla Bowl

 


 In a tortilla shell dish, scrambled eggs and cheese are topped with sea salt-dusted avocados. Paprika and salsa are optional.

 

 

Ingredient Checklist

 

1 (10 inch) soft flour tortilla

2 eggs

½ teaspoon milk

½ teaspoon butter  

¼ cup shredded Mexican cheese blend, or more to taste

½ avocado - peeled, pitted, and diced

¼ cup salsa, or to taste  

1 pinch paprika, or to taste  

1 pinch sea salt

 

Heat the oven to 400°F.  Place the tortilla in a tortilla shell mold or an oven-safe dish. In a microwave-safe bowl, combine the eggs, milk, and butter. Mix in the Mexican cheese blend. 5 to 7 minutes in a preheated oven, bake tortilla until crispy and golden. Allow to cool for about 2 minutes before removing from mold to serving plate. Microwave the egg mixture for 30 seconds to 1 minute, or until set. Remove the egg mixture from the microwave and gently whisk it with a fork. Cook for another 30 seconds in the microwave, or until completely set.

Top fried eggs with avocado, salsa, paprika, and salt in a tortilla bowl.

Pomegranate Chicken

 


A beautiful meal involves basting a chicken with a delicious pomegranate reduction.

 

Here's what you need to start!

 

¼ cup packed brown sugar

1 tablespoon cider vinegar

2 cloves garlic, peeled and smashed

1 tablespoon lime juice

1 lime

1 (4 pound) whole chicken

½ small onion

1¼ teaspoons salt, divided

1 bay leaf

½ teaspoon black pepper

½ teaspoon dried rosemary

 

Heat the oven to 400°F.

In a saucepan, combine the pomegranate juice, brown sugar, vinegar, and garlic. Bring the water to a boil over medium-high heat. Cook, stirring periodically, for approximately 10 minutes, or until the mixture is reduced to 3/4 cup. Remove from the fire and remove the garlic, then whisk in the lime juice and set aside for 5 minutes to cool. 6 tablespoons pomegranate syrup, is let aside.

 

Pierce several holes in the lime with a fork and place it in the cavity of the chicken, along with the onion, 1/2 teaspoon salt, bay leaf, pepper, and rosemary. Bind the legs together with kitchen string, season the skin with the remaining 3/4 teaspoon salt, and place the chicken in a roasting pan, breast side up.

Bake the chicken for 1 hour, basting with pomegranate syrup every 20 minutes, or until an instant-read thermometer inserted into the thickest regions of all pieces reads 165 degrees F. Allow the chicken to rest for 10 minutes before cutting. Drizzle with the remaining pomegranate syrup and serve.

New Year Day Dinner

 


 Begin the New Year in with a supper of pork and cabbage for good luck!

 

To start you will need the following

 

1 tablespoon vegetable oil

1 pound boneless pork, cut into thin bite-size pieces

1 tablespoon butter

½ head cabbage, shredded

1 onion, diced

½ teaspoon caraway seeds

salt and ground black pepper to taste

1½ cups chicken broth, divided

1 red bell pepper, diced

1 green bell pepper, diced

 

In a pan over medium heat, heat the vegetable oil; cook and toss the pork in the heated vegetable oil until browned, about 10 minutes. Place the meat in a bowl. In the same skillet, melt the butter and cook and toss the cabbage until it has wilted, about 5 minutes. Cook until the onion is transparent, approximately 5 minutes more, stirring often.

Season veggies with salt and black pepper and sprinkle with caraway seeds; pour 1/2 cup chicken broth into pan. Raise the heat to medium-high and simmer until the liquid has almost completely evaporated; pour the remaining 1 cup broth into the pan. Return the pork to the skillet, add the red and green bell peppers, and simmer until the peppers soften, about 10 minutes.
