Heat
the oven to 400°F. Place the tortilla in a tortilla shell mold or an
oven-safe dish. In a microwave-safe bowl, combine the eggs, milk, and butter.
Mix in the Mexican cheese blend. 5 to 7 minutes in a preheated oven, bake
tortilla until crispy and golden. Allow to cool for about 2 minutes before
removing from mold to serving plate. Microwave the egg mixture for 30 seconds
to 1 minute, or until set. Remove the egg mixture from the microwave and gently
whisk it with a fork. Cook for another 30 seconds in the microwave, or until
completely set.
Top
fried eggs with avocado, salsa, paprika, and salt in a tortilla bowl.
