Begin the New Year in with a supper
of pork and cabbage for good luck!
To
start you will need the following

tablespoon vegetable oil
1
pound boneless pork, cut into thin bite-size pieces
1
tablespoon butter
½
head cabbage, shredded
1
onion, diced
½
teaspoon caraway seeds
salt
and ground black pepper to taste
1 ½ cups
chicken broth, divided
1
red bell pepper, diced
1
green bell pepper, diced
In a
pan over medium heat, heat the vegetable oil; cook and toss the pork in the
heated vegetable oil until browned, about 10 minutes. Place the meat in a bowl.
In the same skillet, melt the butter and cook and toss the cabbage until it has
wilted, about 5 minutes. Cook until the onion is transparent, approximately 5
minutes more, stirring often.
Season
veggies with salt and black pepper and sprinkle with caraway seeds; pour 1/2
cup chicken broth into pan. Raise the heat to medium-high and simmer until the
liquid has almost completely evaporated; pour the remaining 1 cup broth into
the pan. Return the pork to the skillet, add the red and green bell peppers,
and simmer until the peppers soften, about 10 minutes.
