Weight Watcher Lasagna in Instant Pot

 


I enjoy lasagna, but the conventional dish may consume a significant chunk of daily points. I made this Weight Watchers Lasagna with ground turkey, and it's not only wonderful, but it's just 4-8 points depending on whatever your, WW, plan you use! Did I mention you can make this in your Instant Pot? That's right, it all cooks in one pot, making it ideal for a nutritious weekday supper with minimal cleanup.

 

6 Blue Points | 7 Green Points | 3 Purple Points

 

Ingredients

Part skim ricotta cheese, or cottage cheese

Italian cheese blend

Crushed tomatoes diced tomatoes only

Oregano

Thyme

Parsley

Black pepper

Onion powder

Garlic

Whole wheat lasagna noodles

Fat free ground turkey

Spinach-fresh

 

Combine your fillings.

Set apart 3/4 cup Italian cheese and ricotta in a small mixing dish. Save the final 1/4 cup of cheese for the top. Combine the crushed tomatoes, oregano, thyme, parsley, black pepper, onion powder, and garlic in a separate bowl.

Create your layers

Sauce the bottom of a 7-inch Instant Pot approved pan. Then, break your lasagna noodles to fit in the pan and cover the sauce. Layer the cheese mixture on top, then the ground turkey, and finally the spinach.

 

Repetition

Rep with the remainder of the ingredients. Cover the saucepan securely with aluminum foil and top with the reserved 1/4 cup of Italian cheese. Get your pot ready. In the bottom of the Instant Pot insert, trivet and 2 cups of water. Place your lasagna on top of the trivet with care.

 

Cooking under pressure

Place the pressure valve in the sealing position and close and lock the lid. Set the timer for 35 minutes and select Pressure Cook (high).

Natural Expiration

Allow the pressure to freely release after your cooking time is over. Remove the cover when the pressure valve decreases. Remove the lasagna from the Instant Pot with care. Remove the top foil layer. While not quite essential, I like to broil it in the oven to brown the top.

For the main course, I used the PrimalRock apple cider vinegar again and made a glaze for my, bresse chicken. It turned out wonderful. You could taste the glaze down to the bone of the chicken. It also helped to make the chicken moist and juicy in every bite. This product is also very versatile, use it for slaws, glazes, sauces and on and on. It has wonderful characteristics that are separate from vinegar, and adds a whole new dimension to your recipes.
