A Taste of the Ranch: Discovering Dos Lobos Ranch
Welcome back to Momz Daily Scoops, where I love discovering new companies, learning about the people behind their products, and sharing delicious food finds with my readers!
Today, I am excited to introduce you to Dos Lobos Ranch, a family-owned ranch in Wise County, Texas, that focuses on raising quality meats with care, transparency, and respect for the land. From their grass-fed beef to their pasture-raised pork, this ranch is all about helping families bring flavorful food to their dinner tables.
I will be taking a closer look at three delicious cuts: their burger patties, bacon, and Pike's Peak roast. I will also share a hearty recipe you can make with the roast and some tasty ideas for serving all three products.
Meet Dos Lobos Ranch: The Story Behind the Farm
Dos Lobos Ranch began in January 2023 with Heather and Richard Brink, a couple who wanted to raise their own food and build a life closer to the land. What started as a family homestead grew into a small, pasture-based ranch serving families in North Texas and beyond.
Heather brought her background in biology and environmental engineering to the ranch, while Richard eventually discovered his own passion for farming. Together, they built a business around their belief that people should know where their food comes from and how the animals providing it are raised.
Their approach includes rotational grazing, careful livestock selection, and a focus on improving pasture and soil health. They raise heritage Kunekune pigs for pork and Dexter cattle for beef, along with seasonal turkeys. Their products are sold through online ordering, local delivery, farmers markets, and shipping options for eligible products.
What I appreciate about the story behind a family farm like this is the personal connection between the people raising the animals and the families enjoying the food. It is a wonderful reminder that there is a lot of work, planning, and dedication behind the meat we prepare at home.
What Products Does Dos Lobos Ranch Offer?
Dos Lobos Ranch offers a selection of meats and farm products, with availability depending on the season and what is ready for customers.
Some of their offerings include:
Grass-fed and grass-finished Dexter beef: A variety of beef cuts for grilling, roasting, braising, and everyday family meals.
Pasture-raised Kunekune pork: Pork cuts that include bacon, pork chops, ribeyes, sausage, ham, and roasts.
Seasonal pasture-raised turkey: A seasonal option for holiday meals and special family gatherings.
Meat bundles and hog shares: Options for customers who want to try a variety of cuts or stock their freezers.
Additional ranch offerings: Gift cards and breeding livestock when available.
The ranch emphasizes pasture-based animal care, transparency about its practices, and a direct connection with customers.
Now, let's talk about the three products featured in this review!
1. Dos Lobos Ranch Burger Patties
Dos Lobos Ranch raises grass-fed and grass-finished Dexter cattle, and their beef offerings include ground beef products suitable for burgers and other family favorites.
A good beef burger should have a savory, beef-forward flavor, with a satisfying texture and enough fat to help keep it juicy. The exact flavor and texture of the patties will depend on their fat content, thickness, and how they are cooked.
What pairs great with burger patties?
Here are some of my favorite ways to serve burgers:
Classic cheeseburger: Add sharp cheddar, lettuce, tomato, onion, and your favorite burger sauce.
Bacon cheeseburger: Add crispy bacon, melted cheese, and caramelized onions for a delicious combination.
Mushroom Swiss burger: Top with sautéed mushrooms and Swiss cheese.
BBQ burger: Add barbecue sauce, cheddar, and crispy onion rings.
Southwest burger: Add pepper jack cheese, avocado, and chipotle mayonnaise.
For side dishes, try homemade French fries, sweet potato wedges, creamy coleslaw, baked beans, potato salad, or grilled corn on the cob.
My favorite idea is a bacon cheeseburger with a toasted brioche bun, sharp cheddar, lettuce, tomato, and a little smoky barbecue sauce. That sounds like a meal everyone would want to gather around the table for!
2. Dos Lobos Ranch Bacon
Dos Lobos Ranch raises heritage Kunekune pigs for its pork products. The ranch describes its pork as pasture-raised and emphasizes the breed's rich flavor, marbling, and tenderness. Its pork selection includes bacon, although availability can vary.
Bacon is wonderful because it combines savory pork flavor with a salty, smoky character when smoked, plus a crisp or tender texture depending on how it is prepared. I would love to use bacon in breakfast dishes, sandwiches, salads, and hearty dinners.
The actual flavor, thickness, and smoking profile of the bacon will depend on the particular product, so check the package for its preparation details.
What pairs great with bacon?
Bacon is incredibly versatile. Here are a few delicious ideas:
Breakfast: Scrambled eggs, fried eggs, pancakes, waffles, or breakfast potatoes.
Sandwiches: BLTs, grilled cheese with bacon, or a turkey and bacon club.
Vegetables: Roasted Brussels sprouts, green beans, asparagus, or sautéed cabbage.
Comfort food: Baked macaroni and cheese, loaded baked potatoes, or creamy potato soup.
Salads: Spinach salad with bacon, hard-boiled eggs, and a tangy dressing.
Burgers: Crumble or layer bacon over a cheeseburger for a classic combination.
One of my favorite kitchen ideas is using cooked bacon to add flavor to roasted vegetables. The savory bacon complements the natural sweetness of vegetables such as Brussels sprouts and green beans.
You can also make a bacon, cheddar, and potato breakfast casserole for a filling weekend brunch.
3. Dos Lobos Ranch Pike's Peak Roast
Pike's Peak roast is commonly cut from the heel of the beef round. It is generally a leaner cut with a pronounced grain, so it benefits from gentle, moist cooking rather than being rushed in a hot, uncovered oven. Dos Lobos Ranch has also shared guidance on cooking this cut, recommending browning it first and then braising it in a covered pot until tender.
When cooked properly, it can be used for tender pot roast, sliced beef, shredded beef tacos, or beef served with noodles. The secret is giving the meat enough time and moisture to soften.
What pairs great with Pike's Peak roast?
A roast dinner offers so many possibilities!
Potatoes: Creamy mashed potatoes, roasted potatoes, or garlic mashed potatoes.
Vegetables: Carrots, onions, celery, green beans, or roasted Brussels sprouts.
Bread: Warm dinner rolls, crusty bread, or homemade biscuits to soak up the gravy.
Sauces: Homemade beef gravy, horseradish sauce, or a savory pan sauce.
Fresh sides: A garden salad, coleslaw, or steamed green vegetables.
For a traditional Sunday dinner, I would serve this roast with carrots, potatoes, onions, and homemade gravy. For something a little different, use the leftovers to make shredded beef sandwiches or beef-and-noodle soup.
Momz Daily Scoops Recipe: Garlic Herb Pike's Peak Pot Roast
PREP TIME
20 minutes
COOK TIME
3–4 hours or longer
SERVINGS
4–6
Ingredients
1 Pike's Peak beef roast, approximately 2½–3 pounds
2 tablespoons olive oil
1 large yellow onion, cut into wedges
4 carrots, peeled and cut into chunks
1½ pounds baby potatoes, halved
4 cloves garlic, minced
2 cups beef broth
1 tablespoon Worcestershire sauce
1 teaspoon dried rosemary
1 teaspoon dried thyme
1 teaspoon paprika
Salt and black pepper, to taste
2 tablespoons tomato paste
1 tablespoon cornstarch mixed with 1 tablespoon cold water, optional for thickening gravy
Fresh parsley, chopped, for garnish
Instructions
1. Prepare the roast. Pat the beef dry with paper towels. Season all sides with salt, black pepper, and paprika.
2. Brown the beef. Heat olive oil in a heavy Dutch oven over medium-high heat. Sear the roast on all sides until nicely browned. Remove the roast and set it aside.
3. Cook the aromatics. Add the onion to the pot and cook for several minutes. Stir in the garlic and tomato paste, cooking briefly until fragrant.
4. Make the cooking liquid. Pour in the beef broth and Worcestershire sauce. Stir in the rosemary and thyme, scraping up the browned bits from the bottom of the pot.
5. Add the roast and vegetables. Return the beef to the pot. Add the carrots and potatoes around it. Cover tightly with a lid.
6. Slow-cook until tender. Place the pot in a 300°F oven and cook for approximately 3–4 hours, checking periodically and adding a little broth if needed. The roast may require additional time depending on its size and the particular cut. It is ready when it yields easily to a fork. For a lean Pike's Peak roast, keep it covered and avoid letting the liquid boil aggressively.
7. Prepare the gravy. Transfer the roast and vegetables to a serving platter. If you prefer thicker gravy, bring the cooking liquid to a gentle simmer and whisk in the cornstarch slurry a little at a time until it reaches your desired consistency.
8. Serve and enjoy! Slice the beef thinly across the grain, or pull it apart if it has become tender enough to shred. Spoon the gravy over the meat and vegetables, and garnish with fresh parsley.
My serving suggestion
Serve this pot roast with warm dinner rolls and a fresh green salad. The tender beef, sweet carrots, soft potatoes, and savory gravy make a comforting meal for a chilly evening or a Sunday family dinner.
Momz Daily Scoops tip: Save the leftovers! The beef makes wonderful sandwiches the next day, and you can add any remaining meat and gravy to a pot of beef vegetable soup.
