Vegan Tortilla with Cheese n Veggies




Actually starting to eat healthy is no simple feat, particularly if you're not fond of eating fruit and vegetables, which will be the bulk of your new diet. But who says you can't transform these nutritious powerhouses into tasty dishes? The trick is to play in the kitchen to figure out what fits your palate. Eating safe is better than most people believe. 

Here is a great all-veggie recipe you'll love.
Cheddar Vegetable Bite
What you need: 

6 whole wheat tortillas
2 cups Cheddar cheese
1/2 cup chopped mushrooms

1/2 cup chopped red bell pepper 
1/2 cup chopped onion
1/2 cup chopped yellow squash
1/2 cup chopped zucchini
1 teaspoon olive oil

Pour the olive oil in a skillet over medium heat and cook the vegetables until tender, around 6 to 8 minutes. Remove the vegetables out of the oven. Lay one tortilla of wheat on the same pan. Divide the cheddar cheese into 6 equal sections, then brush the tortilla with 1 part of the cheese, accompanied by around 3/4 cup of the vegetable mixture, then another 1 part of the cheese. Cover with another tortilla and cook until golden brown on each side. Repeat with remainder of the tortillas, the cheese and the vegetables.
