Teriyaki Chicken in the
Pressure Cooker/Instant Pot
In a mixing bowl, whisk
together 1/2 cup low sodium soy sauce, 1/4 cup rice vinegar, 2 minced garlic
cloves, 2 teaspoons fresh grated ginger, 2 tablespoons canola oil, 2
tablespoons honey, 1/4 teaspoon black pepper, and 1 tablespoon corn starch.
Place aside.
Set the Instant Pot to sauté
mode and the “more” setting. Brown the chicken in the oil, about 2 to 3 minutes
per side. When the chicken is browned, press the "cancel" button.
Pour in the teriyaki sauce
and stir to combine.
Close and secure the lid.
Choose "Manual" or "Pressure Cook" and set the timer to 10
minutes. When the timer goes off, wait 5 minutes for the pressure to release on
its own. Then, carefully turn the valve to the “Venting” position to release
any remaining pressure.
If desired, top with sliced
green onions and sesame seeds. Serve over rice!
