Slow Cooker Mediterranean Chicken

 


You will want this dish once a week!

 

 

1 tbsp olive oil

2 lbs. boneless skinless chicken thighs

1 sweet onion, sliced thin

3 garlic cloves, minced

1 cup roasted red peppers, chopped

1 cup olives

1/2 cup chicken broth

1 tbsp. capers 1 tsp. oregano

1 tsp. dried thyme

1 tsp. rosemary

1 bay leaf

Salt and pepper

1 lemon

 

In a saute pan over medium high heat, heat the olive oil. Brown all sides of the chicken. Remove the chicken from the pan and put it aside. Combine the onions and garlic in a mixing bowl. Cook for 4-5 minutes, or until the vegetables are soft. In the slow cooker, combine the chicken, onion, garlic, and additional ingredients. Cook for 4 hours on low, or until the chicken is fork tender. As needed, season with salt and pepper. Serve with freshly squeezed lemon juice.
