A special treat for a
Holiday, or any day. You will shine at the dessert table.
Ingredients:
2 (8-ounce) packages of cream cheese, softened
1/2 cup white sugar
1/2 teaspoon vanilla extract
2 eggs
1 (9-inch) prepared graham cracker crust
1/2 cup pumpkin puree
1/2 teaspoon ground cinnamon
1 pinch of ground cloves
1 pinch of ground nutmeg
1/2 cup frozen whipped topping, thawed
Heat the oven to 325°F. In a large mixing bowl, combine cream
cheese, sugar, and vanilla. Blend until smooth. One at a time, blend in the
eggs. 1 cup batter should be removed and spread into the bottom of the crust;
leave aside.
Stir in the remaining batter, pumpkin, cinnamon, cloves, and
nutmeg until completely combined. Spread evenly over the batter in the crust.
Bake for 35 to 40 minutes, or until the middle is almost set,
in a preheated oven. Allow to chill for 3 hours or overnight in the
refrigerator. After serving, top with whipped topping.
