This recipe is just not for a summer BBQ. It goes great
with baked ham, burgers, and many other dishes.
Ingredients:
10 slices bacon halved
1 yellow onion finely diced
1/2 green bell pepper finely diced
54 oz can pork and beans or small cans of an equal amount
4 Tbsp ketchup
1/4 cup molasses
2/3 cup brown sugar
1/4 cup cider vinegar
2 tsp dry mustard
Cook bacon until approximately halfway done, then drain
on a paper towel.
Preheat the oven to roughly 2 tablespoons of bacon
oil in a large pan over MED heat. Cook for 5 minutes until the onion
and green pepper are softened.
Stir in the other ingredients until completely combined.
Allow the mixture to boil for about a minute.
Grease a 13x9 baking dish while the mixture is boiling.
Place the beans in the prepared baking dish and top with
the cooked bacon.
Bake for 2-3 hours, depending on the consistency you
want.
Allow the beans to rest for 5 minutes before serving. en
to 325°F and place the rack in the lesser position.
