This is one of those meals that you will make again and again. This simple meal is sweet, salty, crunchy, and creamy, and it is sure to please a gathering.
Ingredients
2 boneless, skinless chicken breasts
1/2 cup BBQ sauce
1 cup chicken stock
1 tsp. cumin
1 avocado
1/2 cup feta
2 cups red cabbage
8 corn tortillas
Cilantro
Fill the slow cooker bowl halfway with bbq sauce, chicken stock,
and cumin. To combine the ingredients, stir them together.
Cook the chicken breast in the BBQ sauce mixture for 4 hours on
high, or until it falls apart.
Shred the cabbage and slice the avocado thinly. As needed,
crumble the feta.
In a nonstick pan, heat the tortillas in batches over low heat
until soft.
On top of the tortillas, layer cabbage, avocado, feta, and
chicken. Garnish with cilantro and serve.
