INGREDIENTS
For the dough:
1 cup flour
⅓ cup) butter cold and cut into cubes
1 egg
1 teaspoon salt
For the filling:
1 cup frozen spinach
⅓ cup grated mozzarella cheese
1 egg
Salt and pepper, by your taste
For garnish
Handful sesame seeds
Blend the flour, salt, and butter in a blender bowl until the mixture is
crumbly.
Blend in the egg until the dough starts to come together.
Refrigerate the dough for 30 minutes after shaping it into a disc on
baking paper.
Cook the frozen spinach in a pot of boiling water until it is completely
thawed.
Rinse the spinach thoroughly.
In a mixing bowl, thoroughly combine all of the filling ingredients. Remove
the dough from the fridge and roll it out on a floured surface.
Cut circles out of the dough with a glass or a round cookie cutter.
Fill every dough circle with 1 tsp of filling and roll it into
triangular cookies.
Dust the cookies with water and sprinkle with sesame seeds.
Position the cookies on a baking sheet.
Freeze the baking tray containing the cookies for 30 minutes.
Preheat the oven to 170°C / 350°F fan mode.
For 14 minutes, bake the cookies. After about 10 minutes, check them and
remove them if they are turning too brown.
