Prep time: 15 minutes

Ingredients

  • 4 ripe bananas
  • 1 cup vanilla pudding
  • ½ cup whipped topping or whipped cream
  • ½ cup crushed graham crackers
  • ¼ cup chocolate chips or chocolate shavings
  • 4 tablespoons Kailua Honey Coconut Creamed Honey
  • ¼ cup toasted coconut flakes
  • 1 teaspoon vanilla extract

Directions

  1. Slice the bananas into thin rounds.
  2. Place the vanilla pudding in a bowl and gently fold in the vanilla extract.
  3. Spoon a layer of crushed graham crackers into the bottom of four dessert glasses.
  4. Add a layer of sliced bananas.
  5. Spoon vanilla pudding over the bananas.
  6. Add a small spoonful of coconut creamed honey.
  7. Repeat the layers until the glasses are nearly full.
  8. Top each parfait with whipped cream.
  9. Sprinkle with toasted coconut and chocolate shavings.
  10. Drizzle another small spoonful of coconut creamed honey over the top.
  11. Refrigerate for at least 30 minutes before serving.

My Serving Suggestion

For an extra tropical touch, add a few pieces of diced pineapple between the layers.

Barrel-Aged Bourbon Honey: A Completely Different Honey Experience

If Coconut Creamed Honey is the tropical, creamy side of Kailua Honey, Barrel-Aged Bourbon Honey is its rich and sophisticated side.

This is one of the most interesting products in the collection because it isn't simply honey with bourbon flavoring added to it.

Kailua Honey created this product in collaboration with Koʻolau Distillery. Raw Hawaiian honey is aged in bourbon barrels, allowing the honey to pick up characteristics from the wood, including smoky, oak, and vanilla notes. Importantly, Kailua Honey describes the finished honey as non-alcoholic.


The Flavor of Barrel-Aged Bourbon Honey

This isn't the bright, floral honey you might drizzle over your morning toast.

Barrel-aged bourbon honey has a deeper personality.

The natural sweetness of Hawaiian honey is complemented by oak, vanilla, and smoky bourbon-barrel notes. The result is a richer flavor that makes it particularly interesting for cooking.

Kailua Honey recommends using it in hot tea and coffee, over pancakes, biscuits, and cornbread, as well as on bread pudding and vanilla ice cream. The company also specifically recommends it as a barbecue glaze.


The Texture

Barrel-Aged Bourbon-Honey-Glazed Pork Tenderloin

Serves: 4–6
Prep time: 10 minutes
Cook time: about 25–35 minutes

Ingredients

  • 1½ pounds pork tenderloin
  • ¼ cup Kailua Honey Barrel-Aged Bourbon Honey
  • 2 tablespoons Dijon mustard
  • 1 tablespoon olive oil
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon garlic powder
  • ½ teaspoon smoked paprika
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 teaspoon fresh rosemary, chopped

Directions

  1. Preheat the oven to 400°F.
  2. Pat the pork tenderloin dry with paper towels.
  3. In a small bowl, combine the barrel-aged bourbon honey, Dijon mustard, olive oil, apple cider vinegar, garlic powder, smoked paprika, salt, pepper, and rosemary.
  4. Whisk until the mixture is smooth.
  5. Reserve about ¼ cup of the glaze for later.
  6. Brush the remaining glaze generously over the pork.
  7. Place the pork in a lightly greased baking dish or oven-safe skillet.
  8. Roast until the pork reaches 145°F internally.
  9. During the final several minutes of cooking, brush the reserved glaze over the pork.
  10. Remove from the oven and allow the tenderloin to rest for about 5–10 minutes.
  11. Slice and serve with the pan juices.

What to Serve With It

This pork would be fantastic with:

  • Roasted sweet potatoes
  • Garlic mashed potatoes
  • Roasted Brussels sprouts
  • Grilled pineapple
  • Rice pilaf
  • A simple green salad

For a Hawaiian-inspired meal, I'd serve the pork with grilled pineapple and coconut rice.
