The Secret to Sky-High, Flaky Homemade Buttermilk Biscuits

There are few baking triumphs quite as satisfying as pulling a pan of golden-brown, sky-high buttermilk biscuits out of the oven. When you break one open while it’s still steaming, revealing soft, buttery layers that practically beg for a pat of butter or a drizzle of honey, it feels like pure magic.

While store-bought tubes have their place, nothing compares to homemade. But let’s be honest—making biscuits can sometimes feel intimidating. Have you ever ended up with dense, flat hockey pucks instead of tall, fluffy clouds?

Today, we are changing that. I’m sharing my foolproof recipe and the key techniques to guarantee your biscuits rise high and flake apart effortlessly every single time.

Just take a look at these beauties. Golden on top, tall vertical layers, and an impossibly tender crumb inside.

The Golden Rules for Flaky Biscuits

Before you grab your rolling pin, keep these three golden rules in mind:

1.  Keep Everything Cold: Use ice-cold buttermilk and cold butter. As the cold butter melts in the hot oven, it creates pockets of steam that form those iconic, flaky layers.

2.  Do Not Twist the Cutter: When cutting out your biscuits, press straight down and pull straight up. Twisting the cutter seals the edges of the dough, preventing the biscuits from rising to their full height.

3.  Gentle Lamination (The Fold): Just like puff pastry, a few simple folds of the dough create multiple layers of buttery goodness.

The Recipe: Classic Flaky Buttermilk Biscuits

Prep time: 20 mins | Cook time: 15 mins | Yields: 8-10 biscuits

Ingredients

  • 2 ½ cups (315g) all-purpose flour
  • 1 tablespoon baking powder
  • ½ teaspoon baking soda
  • 1 tablespoon granulated sugar
  • 1 teaspoon kosher salt
  • ½ cup (1 stick) unsalted butter, very cold and cut into small cubes
  • 1 cup buttermilk, kept cold until ready to use
  • Optional: Melted butter for brushing the tops right after baking

Instructions

1.  Preheat and Prep: Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper. (Pro tip: Place your biscuits close together on the sheet; they help each other rise higher as they bake!)

2.  Mix Dry Ingredients: In a large mixing bowl, whisk together the flour, baking powder, baking soda, sugar, and salt.

3.  Cut in the Butter: Add the cold cubed butter to the flour mixture. Using your fingers or a pastry blender, quickly cut the butter into the flour until it resembles coarse crumbs with pea-sized pieces of butter still visible.

4.  Add Buttermilk: Pour in the cold buttermilk. Stir gently with a spatula just until a shaggy dough forms. Do not overmix!

5.  Fold for Layers: Turn the dough out onto a lightly floured surface. Pat it into a rectangle, then fold it in half like a book. Rotate the dough 90 degrees, pat it out again, and fold it in half a second time. This creates the flaky layers!

6.  Cut: Roll or gently pat the dough out to about 1-inch thickness. Use a 2.5-inch round biscuit cutter to stamp out biscuits, remembering to press straight down without twisting.

7.  Bake: Transfer the biscuits to your prepared baking sheet. Bake for 12–15 minutes, or until the tops are golden brown and puffed up.

8.  Serve: Brush immediately with melted butter and enjoy warm!
