Music City Magic: How to Make Authentic Nashville Hot Chicken at Home





 If you have ever visited Tennessee, chances are your trip included a pilgrimage to try the state’s most legendary culinary export: Nashville Hot Chicken.

Originating in the heart of Music City decades ago, this fiery, crispy fried chicken has taken the culinary world by storm. It’s an unmistakable sensory experience, shatteringly crisp on the outside, incredibly juicy on the inside, and drenched in a fiery, spiced cayenne paste that packs an unforgettable punch.

While you can find lines wrapped around buildings at famous spots in Nashville, you don't have to buy a plane ticket to experience it. With the right technique, you can master authentic hot chicken right in your own kitchen. Let's fire up the fryer!

 

Just look at that vibrant, spiced-oil glaze coating an ultra-crispy piece of fried chicken, served traditionally over white bread with dill pickle chips to cool the fire.

The Recipe: Authentic Nashville Hot Chicken

Yields: 4 servings

Prep time: 30 mins (+ 2 hours soaking) | Cook time: 20 mins

Ingredients

For the Chicken & Marinade:

  • 4-5 lbs bone-in, skin-on chicken pieces (thighs, drumsticks, and breasts)
  • 1 ½ cups buttermilk
  • 2 tablespoons hot sauce (Tennessee style or Louisiana style)
  • 2 teaspoons kosher salt
  • 1 teaspoon black pepper

For the Dredge:

  • 2 cups all-purpose flour
  • 1 tablespoon garlic powder
  • 1 tablespoon smoked paprika
  • 1 teaspoon cayenne pepper
  • 1 teaspoon salt

For the Signature Hot Paste/Glaze:

  • ¼ cup hot oil (ladled carefully from your frying pan right after cooking the chicken)
  • 2 to 3 tablespoons cayenne pepper (adjust based on how brave you are!)
  • 1 tablespoon dark brown sugar
  • 1 teaspoon chili powder
  • 1 teaspoon garlic powder
  • ½ teaspoon smoked paprika
  • A pinch of salt

For Serving:

  • Slices of white bread (essential for soaking up the spicy oil!)
  • Dill pickle chips

Instructions

1.  The Buttermilk Soak: In a large bowl, whisk together the buttermilk, hot sauce, salt, and pepper. Submerge the chicken pieces, cover, and refrigerate for at least 2 hours (or overnight for maximum tenderness).

2.  Prep the Dredge: In a wide, shallow dish, whisk together the flour, garlic powder, smoked paprika, cayenne pepper, and salt.

3.  Dredge the Chicken: Remove chicken from the buttermilk, allowing excess to drip off, then press firmly into the seasoned flour mixture until fully coated on all sides. Shake off excess and let rest on a wire rack for 15 minutes so the crust sets.

4.  Fry to Perfection: Heat about 2 inches of neutral oil in a large cast-iron skillet or Dutch oven to 350°F (175°C). Fry the chicken in batches (do not crowd the pan!) for about 12 to 15 minutes, turning occasionally, until golden brown, crispy, and the internal temperature reaches 165°F (74°C) for breasts and 175°F (79°C) for dark meat.

5.  Mix the Hot Paste: In a heat-safe bowl, whisk together all the spices and brown sugar for the glaze. Carefully ladle ¼ cup of the hot frying oil right out of the skillet and whisk it into the spice mixture until it forms a smooth, vibrant, paint-like paste.

6.  The Hot Finish: Immediately after the chicken comes out of the fryer and rests briefly on a wire rack, brush or spoon that spicy oil paste generously over both sides of the hot chicken. It will sizzle and cling to the crispy crust.

7.  Serve: Lay a slice of white bread on a plate, top with your steaming hot Nashville Hot Chicken, and garnish generously with dill pickle chips to cut through the heat.
