The Secret to Tender, Smoky BBQ Pork Chops

 




 There are few dinner sounds as satisfying as the sizzle of a thick-cut pork chop hitting a hot grill or cast-iron skillet. But let’s be honest—pork chops have gotten a bad reputation over the years. All too often, they end up dry, tough, and lacking flavor, earning them the dreaded "hockey puck" status.

The good news? It doesn't have to be that way.

Today, I’m sharing my absolute favorite recipe for BBQ pork chops. The secret to keeping them incredibly juicy isn't complicated; it starts with a quick brine-like dry rub, a thick cut of meat, and a sticky, caramelized homemade barbecue glaze applied at the very end.

Whether you cook them outdoors on the grill or inside using your trusty cast-iron skillet, these chops are smoky, sweet, tangy, and melt-in-your-mouth tender. Let’s fire it up!

The Golden Rules for Perfect Pork Chops

Before we get to the recipe card, keep these two tips in mind:

1.  Buy Thick-Cut: Avoid thin, 1/2-inch chops. They cook through way too fast and dry out instantly. Look for bone-in or boneless chops that are at least 1 to 1.5 inches thick. The bone adds extra flavor and keeps the meat juicier while cooking!

2.  Don't Overcook: Pork can be safely enjoyed at an internal temperature of 145°F (63°C), followed by a 3-minute rest. Pulling them off the heat at this exact moment guarantees juicy meat.

The Recipe: Smoky & Sweet BBQ Pork Chops

Yields: 4 servings

Prep time: 15 minutes | Cook time: 12-15 minutes

Ingredients

  • 4 thick-cut pork chops (about 1 to 1.5 inches thick, bone-in preferred)
  • 1 tablespoon olive oil or high-smoke oil

The Dry Rub:

  • 1 tablespoon brown sugar
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon kosher salt
  • ½ teaspoon freshly cracked black pepper
  • ½ teaspoon ground mustard

The BBQ Glaze:

  • ½ cup of your favorite barbecue sauce (sweet and smoky works best)
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon butter

Instructions

1.  Bring to Room Temp: Remove your pork chops from the refrigerator about 20 minutes before cooking. Pat them completely dry with paper towels. (Dry meat equals a better sear!).

2.  Mix the Rub: In a small bowl, whisk together the brown sugar, smoked paprika, garlic powder, onion powder, salt, pepper, and ground mustard.

3.  Season Generously: Rub all sides of each pork chop lightly with olive oil, then coat them evenly with the dry rub, pressing it gently into the meat.

4.  Sear (Cast Iron or Grill):

o   If using a grill: Pre-heat your grill to medium-high heat (around 400°F).

o   If using a cast-iron skillet: Heat a heavy-duty skillet over medium-high heat with a splash of oil until shimmering.

o   Sear the pork chops for about 3 to 4 minutes per side until a deep, beautiful golden-brown crust forms.

5.  Glaze and Finish: While the second side is searing, whisk together the BBQ sauce, apple cider vinegar, and butter in a small bowl. Brush the warm glaze generously over the top of each chop during the last 2 minutes of cooking.

6.  Check the Temp: Use an instant-read thermometer inserted into the thickest part of the chop. Pull them off the heat when they reach 145°F (63°C).

7.  Rest: Transfer the chops to a warm plate or cutting board, tent loosely with foil, and let them rest for 5 minutes. This allows the juices to redistribute throughout the thick meat.

8.  Serve: Spoon any extra pan juices over the top and serve immediately!
