Homemade chili sauce

 



This recipe for homemade Sweet Chili Sauce is garlicky, sharp, sweet, and a little spicy. This sauce is ideal for dipping spring rolls, egg rolls, and dumplings in. Alternatively, pair it with barbecued meat, poultry, seafood, and vegetables. You can also enjoy it as a snack with a block of cream cheese and bagel chips or crackers!

 

Ingredients

2 & 1/3 cups water , divided

2 cups rice wine vinegar

2 cups granulated sugar.

4 teaspoons salt

4 fresh red jalapeƱo, red Fresno, or red serrano peppers, stems removed, minced

6 cloves garlic, peeled and minced

1/4 cup plus 2 teaspoons Clear Jel canning starch

 

In a medium-sized saucepan, combine 2 cups of water, the rice wine vinegar, sugar, salt, peppers, and garlic; bring to a boil. Boil for 5 minutes.

Even though the sauce is heating up, combine the remaining 1/3 cup of water and the canning starch.

Pour the canning starch mixture into the pan while vigorously stirring the sauce mixture; continue to stir and bring the mixture back to a boil. Simmer for 1 minute on low heat.

 

Scoop the sauce into 8-ounce glass jars with a ladle, leaving a 1/4-inch clearance at the top. Remove any air bubbles with a chopstick, then adjust the level with additional sauce if necessary.

Wipe the rims of the jars clean with a paper towel dampened with vinegar. Put the lids on the jars and secure them properly.
