Orange Juice Cake

 



 The following traditional Orange Juice Cake is moist and bursting with fresh citrus flavor! Best of all, thanks to a box of cake mix and vanilla pudding, the easy homemade bundt cake comes together in minutes. It's a straightforward dessert that's appropriate for every occasion!

 

Ingredients:

1 (15.25-ounce) box of yellow cake mix

1 (3.4-ounce) box of instant lemon pudding mix

3/4 cup vegetable oil

3/4 cup orange juice

4 large eggs

For the glaze:

2 cups powdered sugar.

3/4 cup orange juice

4 tablespoons unsalted butter

 

Set the oven to 350°F and prepare a 10 to 12-cup Bundt pan with butter and flour.

In a large mixing bowl, combine the cake mix, pudding mix, vegetable oil, orange juice, and eggs with an electric mixer. Mix for approximately 2 minutes. Fill the prepared pan halfway with the cake mix.

Bake for 35 to 40 minutes, or until a toothpick inserted into the center comes out clean and the cake begins to pull away from the pan sides. Allow the cake to cool completely in the pan while you prepare the glaze.

 

Combine the powdered sugar, orange juice, and butter in a small saucepan. Cook, stirring frequently, over medium-low heat until the butter has melted.

Poke holes in the cake with a skewer or toothpick. While the cake is still in the pan, pour the warm glaze over it. It will appear to be a lot of glazes, but just keep pouring. Allow to cool for 15 to 20 minutes, or until the cake is completely cool and most of the glaze has been absorbed, before inverting onto a serving platter. Allow to completely cool before serving. This cake is best served after resting for 8 hours.
