You will get plenty of compliments with this dreamy dessert.
1 8-oz package of cream cheese (softened)
1 cup powdered sugar
1 cup crushed pineapple (drained)
1 8-oz tub of whipped topping, like Cool Whip
Crust
1/2 cup granulated sugar
1/2 cup melted butter
20 graham crackers, crushed
Topping
1/4 cup shredded coconut
1/4 cup diced pineapple (drained)
Mix the cream cheese with an electric mixer in a
medium mixing bowl until slightly fluffy.
Mix in the powdered sugar gradually until well
combined.
Incorporate the whipped topping and beat until fluffy.
Fold in the crushed pineapple with a spatula and set
aside.
Combine the crushed graham crackers, granulated sugar,
and melted butter in a small mixing bowl until well combined, then pat into a 9
X 9 baking dish.
Distribute the filling evenly over the crust with a
spatula.
Refrigerate for 2 hours, or until firm, on top of the
shredded coconut and diced pineapple.
