Boston Baked Beans are a type of baked bean that is generally flavored with salt pork or bacon and sweetened with maple syrup or molasses. You will love these beans as a side dish for any occasion.
Ingredients
4 ounces salt pork, trimmed of rind and cut into ½-inch cubes
2 ounces bacon, cut into ¼-inch pieces
1 medium onion, finely chopped
½ cup + 1 tablespoon mild molasses, divided
⅓ cup light brown sugar
2 tablespoons brown mustard
1 pound dried small white beans,
1¼ teaspoons salt
9 cups water, 1
1 teaspoon apple cider vinegar
Salt and pepper, to taste
Directions
The oven rack should be positioned lower-middle; the temperature should be 300 degrees F.
Large Dutch oven at least 7 quarts with salt pork and bacon added; cook for seven minutes over medium heat, stirring regularly, until nicely browned and most fat has rendered. After adding the onion, simmer it for about eight minutes while stirring occasionally.
Add nine cups of water, 1/14 teaspoons salt, twelve cups of molasses, brown sugar, mustard, and beans. Raise heat to medium-high and bring to a boil. Place the pot in the oven with the cover on. Bake for about 4 hours, stirring after two hours have passed, till beans are soft.
Uncover the lid and keep cooking for another 1 to 1/12 hours, or until the liquid has thickened to a syrupy thickness. Beans should be taken out of the oven and stirred with the last tablespoon of molasses, vinegar, and extra salt and pepper as desired. Serve
