Waffle sandwich, a fun and yummy treat for everyone. Easy to make, and fun as an activity with the little ones.
2 c. all-purpose flour
1 tbsp. sugar
1 tbsp. baking powder
1/2 tsp. baking soda
1/2 tsp. kosher salt
1 1/2 c. low-fat buttermilk
2 large eggs
4 tbsp. unsalted butter, melted
2 pints vanilla ice cream, softened
Multicolored sprinkles, for coating
Combine the flour, sugar, baking powder, baking soda, and salt
in a large mixing bowl. Combine the buttermilk, eggs, and melted butter in a
separate bowl. Combine in the buttermilk mixture until it is completely
incorporated.
Preheat the round waffle iron. Cook until light golden brown,
about five to six minutes, with a heaping half of the batter on the waffle
iron. Place on a wire rack. Allow to cool.
Spread ice cream evenly over half of the waffles. Finish with
the remaining waffles, gently pushing the ice cream out to the edges. Sprinkle
sprinkles around the edges. Freeze for four hours or a maximum of two days
until firm. Just before serving, cut each waffle into four triangles.
