1 1/2 tablespoons olive oil, divided
RUB:
2 teaspoons paprika
1 teaspoon brown sugar
1 teaspoon each of garlic powder and onion powder
1/2-1 teaspoon red chili powder
2 teaspoons coarse salt
1/2 teaspoon black cracked pepper
HONEY GARLIC BUTTER SAUCE:
1/2 cup honey
1/2 cup unsalted butter
6 cloves garlic, finely chopped
3 tablespoons low-sodium soy sauce
2 tablespoons rice wine vinegar
Good pinch of salt
1/2 teaspoon cracked black pepper
ADDITIONAL:
1/2 cup low sodium stock, beef or chicken
1/2 cup water
4 teaspoons cornstarch
DIRECTIONS
PORK LOIN: Pat the pork dry with a paper towel. One tablespoon of oil
should be combined with the rub ingredients. Massage the seasoning combination
into the pork.
In a large pan or a skillet, heat the remaining oil (around two
teaspoons) over medium heat. Sear the pork throughout till golden brown,
turning it around to prevent the spices from burning. SAUCE: Melt butter in the
same pan where the pork was cooked, cleaning up any leftover bits. Cook the
garlic for a moment or until fragrant. Add in the remaining sauce ingredients
and bring to a boil for one minute.
COOK ON LOW FOR 6 HOURS: Place seared pork in a 6-quart slow cooker.
Pour sauce over pork; cover with a lid and cook for four to five hours on LOW
heat setting.
Place the pork on a platter or dish and cover it lightly with foil.
let for a ten to fifteen-minute rest. Pour the juices from the slow cooker bowl
into a vessel that's big enough to hold the liquid while the pork rests.
Provide to a boil on medium-high heat.
Combine two tablespoons of juice and four teaspoons of cornstarch.
Stir cornstarch slurry into the sauce and cook for five minutes at a time until
it's thickened to a syrup-like uniformity.
Cook until thickened in sauce.
Keep going with this step until you reach the desired consistency.
Provide the pork slices with the Honey Garlic Butter Sauce drizzled
on top.
