This recipe is far superior to anything you can buy in a bottle. It’s perfectly balanced—tangy, sweet, and savory—and gets its beautiful glossy sheen from a simple cornstarch slurry. It’s ideal for dipping chicken balls or spring rolls or tossing with stir-fried vegetables.

Ingredients:
- ½ cup Pineapple juice
(canned or fresh)
- ⅓ cup Brown sugar, packed (light or dark work)
- ¼ cup Rice vinegar (white
vinegar can be substituted in a pinch)
- 2 tablespoons Ketchup (adds body
and tang)
- 1 tablespoon Soy sauce (adds
savory depth)
- 1 tablespoon Cornstarch
- 2 tablespoons Cold water (for the
slurry)
Instructions:
1. Whisk the Base: In a small saucepan,
combine the pineapple juice, brown sugar, rice vinegar, ketchup, and soy sauce.
Whisk until smooth.
2. Bring to Simmer: Place the saucepan over
medium heat. Bring the mixture to a gentle simmer, stirring occasionally to
ensure the sugar dissolves.
3. Make the Slurry: In a small bowl or cup, dissolve
the cornstarch completely in the 2 tablespoons of cold water until you
have a smooth, milky liquid. ( Note: Always mix cornstarch with cold water,
never hot, or it will clump instantly.)
4. Thicken: Once the sauce in the
saucepan is simmering, slowly pour in the cornstarch slurry while whisking
constantly.
5. Simmer and Gloss: Continue to simmer the
sauce for 1–2 minutes, stirring constantly. The sauce will bubble and rapidly
transform from thin to a thick, translucent, glossy glaze.
6. Remove and Serve: Once it has thickened
(it should coat the back of a spoon), remove the pan from the heat. Let it cool
slightly before serving. It will thicken a bit more as it cools.
