Charred Rainbow Carrots with Whipped Feta, Lentils, and Hot Honey





  This dish is a celebration of textures and temperatures: warm, sweet charred carrots served over a cool, tangy cloud of whipped feta, all grounded by earthy lentils and finished with a spicy-sweet kick of hot honey. It’s visually stunning and packed with protein, fiber, and vitamins.

Yields: 2 large or 4 side servings Prep time: 20 minutes Cook time: 30 minutes

Ingredients:

For the Carrots & Lentils:

  • 1 lb (450g) rainbow carrots, tops trimmed leaving about 1 inch of stem
  • 1 tbsp olive oil
  • ½ tsp cumin seeds
  • Salt and freshly cracked black pepper
  • 1 cup (195g) cooked beluga or French green lentils (canned rinsed or freshly cooked)

For the Whipped Feta:

  • 8 oz (225g) block feta cheese, roughly crumbled
  • 4 oz (115g) Greek yogurt (full fat)
  • 2 tbsp extra virgin olive oil
  • 1 tbsp lemon juice
  • 1 small clove garlic, roughly chopped

For the Garnish & Hot Honey Drizzle:

  • 1 tbsp honey (or maple syrup)
  • ½ tsp red pepper flakes (adjust to heat preference)
  • 2 tbsp fresh dill, roughly chopped
  • 2 tbsp roasted pistachios, roughly chopped

Instructions:

1.      Roast the Carrots: Preheat your oven to 400°F (200°C). Wash and scrub the carrots. If some are thick, slice them in half lengthwise so they cook evenly. On a large rimmed baking sheet, toss the carrots with 1 tablespoon of olive oil, cumin seeds, salt, and pepper. Spread in a single layer. Roast for 25–35 minutes, flipping once halfway through, until tender and the edges are deeply caramelized and charred.

2.     Whip the Feta: While the carrots roast, make the whipped feta. Add the crumbled feta, Greek yogurt, 2 tablespoons of olive oil, lemon juice, and garlic to a food processor. Blend for 2–3 minutes, scraping down the sides as needed, until the mixture is perfectly smooth, airy, and resembles thick whipped cream. (If you don't have a food processor, use an immersion blender in a deep cup). Set aside or refrigerate if the carrots are still roasting.

3.     Prepare the Lentils: If using canned lentils, rinse and drain them well. Place them in a small saucepan or skillet over medium heat and warm them gently with a tablespoon of water or the residual oil from the carrot pan, just until heated through. Season with a pinch of salt.

4.     Make the Hot Honey: In a small microwave-safe bowl or tiny saucepan, combine the honey and red pepper flakes. Warm for 20 seconds in the microwave or briefly on the stove until runny and fragrant.

5.     Assemble the Dish: Spread the whipped feta generously across the bottom of a large, shallow serving platter or bowl. Mound the warm lentils over the center of the feta. Arrange the hot, charred carrots attractively on top of the lentils.

6.     Garnish: Drizzle the entire dish liberally with the spicy hot honey. Finish by sprinkling with the fresh chopped dill and the roasted pistachios for a final salty crunch. Serve immediately while the carrots are warm.
