Whipped Ricotta & Hot Honey Stuffed Figs with Pistachio-Prosciutto Crumb

 




 This dish is an elegant balance of textures and flavors. We take fresh figs, stuff them with a light, airy cloud of lemon-scented whipped ricotta, and roast them until they are jammy. To finish, they are drizzled with spicy-sweet hot honey and topped with a salty, crunchy crumble made of toasted pistachios and crispy prosciutto.

It looks like it came from a high-end restaurant, but it comes together in under 30 minutes.

Yields: 12 stuffed figs (4–6 servings) Prep time: 15 minutes Cook time: 10 minutes

Ingredients:

  • The Figs:
    • 12 large, fresh ripe figs (Black Mission or Brown Turkey)
  • The Whipped Ricotta:
    • 1 cup (225g) whole milk ricotta cheese, well-drained
    • 2 oz (57g) goat cheese (chevre), softened (this adds tang and structure)
    • 1 tbsp honey
    • 1 tsp fresh lemon zest
    • ½ tsp freshly cracked black pepper
  • The Topping (Pistachio-Prosciutto Crumb):
    • 2 slices prosciutto
    • cup (45g) shelled pistachios, roasted and salted
    • 1 tbsp olive oil
    • 2 sprigs fresh thyme, leaves stripped
  • The Finish:
    • ¼ cup hot honey (store-bought or infused yourself)
    • Flaky sea salt (like Maldon)

Instructions:

1.      Prep the Prosciutto: Preheat your oven to 400°F (200°C). Lay the prosciutto slices on a parchment-lined baking sheet. Bake for 8–10 minutes until completely crisp. Remove and let cool, then crumble into small, bacon-like bits.

2.     Prepare the Figs: While the prosciutto bakes, wash the figs and pat them dry. Slice off the hard stem. Cut a deep "X" into the top of each fig, going about halfway down. Gently squeeze the base of the fig to open it up like a flower. Place them in a small, oven-safe baking dish or skillet.

3.     Whip the Ricotta: In a food processor (or using a hand mixer), combine the drained ricotta, softened goat cheese, 1 tablespoon of honey, lemon zest, and black pepper. Blend for 2–3 minutes until the mixture is incredibly light, fluffy, and aerated.

4.     Stuff the Figs: Transfer the whipped ricotta to a piping bag (or a Ziploc bag with the corner snipped off). Pipe a generous amount of the ricotta into the center of each opened fig, mounding it high.

5.     Roast: Bake the stuffed figs at 400°F (200°C) for 8–12 minutes, or until the figs are very tender and the ricotta is warm and slightly set (it may brown just a touch on the tips).

6.     Make the Crumb: While the figs roast, finely chop the toasted pistachios. In a small bowl, toss the chopped pistachios, crispy prosciutto crumbles, olive oil, and fresh thyme leaves.

7.     Assemble: Remove the figs from the oven. While they are still warm, generously drizzle them with the hot honey. Immediately sprinkle the pistachio-prosciutto crumb mixture over the top so it adheres to the honey. Finish with a sprinkle of flaky sea salt.

8.     Serve: Serve warm, ideally with a small spoon to capture all the melting components.
