This dish plays with temperature and texture: warm, jammy roasted figs are contrasted by cool, creamy mascarpone cheese and the salty, crunchy bite of pistachio dukkah (an Egyptian nut and spice blend). It feels incredibly indulgent but is light and naturally sweet.

Ingredients:
For
the Roasted Figs:
- 8–12 ripe fresh figs
(Black Mission or Brown Turkey work well)
- 2 tablespoons mild
honey (such as acacia or orange blossom)
- 1 tablespoon
balsamic glaze
- ½ teaspoon fresh
thyme leaves
- A pinch of flaky sea
salt
For
the Mascarpone Cream:
- 8 oz (225g)
mascarpone cheese, softened
- 2 tablespoons heavy
cream
- 1 tablespoon
powdered sugar
- ½ teaspoon vanilla
extract
For
the Pistachio Dukkah (Nut & Spice Blend):
- ½ cup shelled
pistachios, toasted
- 2 tablespoons sesame
seeds
- 1 tablespoon
coriander seeds
- 1 teaspoon cumin
seeds
- ½ teaspoon fennel
seeds
- ½ teaspoon flaky sea
salt
- ¼ teaspoon freshly
cracked black pepper
Instructions:
1. Preheat & Prep: Preheat your oven to
400°F (200°C). Line a small baking sheet with parchment paper.
2. Make the Dukkah:
o
In
a dry small skillet over medium heat, add the coriander, cumin, and fennel
seeds. Toast, tossing frequently, for 1–2 minutes until fragrant (be careful
not to burn them).
o
Transfer
the toasted spices to a mortar and pestle (or a food processor) and crush them
until they are coarsely ground.
o
Add
the toasted pistachios and sesame seeds to the spices and crush/pulse until you
have a chunky, textured mixture. (Do not make it into a paste).
o
Stir
in the ½ teaspoon of flaky salt and black pepper. Set aside.
3. Prepare the Figs:
o
Wash
the figs and pat them dry. Trim off the hard stems.
o
Cut
each fig deeply in an 'X' shape from the top down, stopping about ¾ of the way
through so the base remains intact. Gently squeeze the bottom to open the fig
slightly like a flower.
o
Arrange
the figs on the prepared baking sheet.
4. Roast the Figs:
o
In
a small bowl, whisk together the 2 tablespoons of honey and 1 tablespoon of
balsamic glaze. Drizzle this mixture evenly over the figs.
o
Sprinkle
with the fresh thyme leaves and a pinch of flaky sea salt.
o
Roast
for 12–15 minutes, or until the figs are very tender, slightly collapsed, and
the juices are bubbling and caramelizing.
5. Whip the Mascarpone:
o
While
the figs are roasting, combine the softened mascarpone, heavy cream, powdered
sugar, and vanilla extract in a medium bowl.
o
Use
a whisk or hand mixer to whip the mixture until it is smooth, light, and holds
soft peaks. (It should be the consistency of thick whipped cream). Keep
refrigerated until ready to serve.
6. Assemble and Serve:
o
Place
2–3 warm roasted figs on each serving plate.
o
Add
a generous dollop (about 2 tablespoons) of the cold mascarpone cream right next
to the figs, or even partially on top so it begins to melt slightly.
o
Immediately
sprinkle the figs and mascarpone generously with the pistachio dukkah.
o
Serve
at once.
