Arroz con Pollo: A Comforting Spanish-Style Chicken and Rice Recipe
There are some meals that just feel like home, and for me, arroz con pollo—chicken with rice—is definitely one of them.

1 red bell pepper, diced

3 cups chicken broth
2 tablespoons olive oil
1 teaspoon smoked paprika
1 teaspoon sweet paprika
1 teaspoon dried oregano
½ teaspoon ground cumin
½ teaspoon black pepper
1 teaspoon salt, or to taste
1 bay leaf
½ teaspoon saffron threads, optional
½ cup green olives, optional
1 tablespoon fresh lemon juice

Preparing the Chicken
Start by patting the chicken pieces dry with paper towels. This helps the skin brown nicely.
Season both sides of the chicken with salt, black pepper, paprika, oregano, and a little cumin.
Heat the olive oil in a large, deep skillet or Dutch oven over medium-high heat.

Turn the chicken over and brown the other side.

Don't clean the pan!

Saffron can be expensive, so don't worry if you don't have it. The dish will still be delicious without it.
Bring the Chicken Back
Nestle the browned chicken pieces into the rice mixture.
Bring everything to a gentle simmer.
Reduce the heat to low, cover the pan, and let everything cook for approximately 25–30 minutes, or until the rice is tender and the chicken reaches a safe internal temperature.
Try not to constantly lift the lid while the rice is cooking.

But keeping the steam inside the pan helps the rice cook properly.
Add the Peas and Olives
During the last few minutes of cooking, add the frozen peas.
If you enjoy olives, add some green olives as well.
The peas bring a pop of color and a little sweetness, while the olives add a wonderful salty, briny flavor.

Let It Rest
Once the chicken is cooked and the rice is tender, turn off the heat.
Let the arroz con pollo rest, covered, for about 5–10 minutes.

Before serving, remove the bay leaf and squeeze a little fresh lemon juice over the top.
Garnish with fresh parsley.
