Bigfoot Cranberry BBQ Pork Tenderloin
If you want a recipe that really lets the cranberry BBQ sauce shine, try this easy pork tenderloin.
Ingredients
1½ pounds pork tenderloin
¾ cup Bigfoot Cranberry BBQ Sauce
2 tablespoons olive oil
2 cloves garlic, minced
1 tablespoon Dijon mustard
1 teaspoon smoked paprika
½ teaspoon salt
½ teaspoon black pepper
1 tablespoon honey
1 tablespoon apple cider vinegar
Optional Garnish
Fresh cranberries
Chopped fresh parsley
Thinly sliced green onions
Directions
1. Prepare the Marinade
In a bowl, combine ¼ cup of the Bigfoot Cranberry BBQ Sauce, olive oil, garlic, Dijon mustard, smoked paprika, salt, pepper, honey, and apple cider vinegar.
Whisk everything together.
2. Marinate the Pork
Place the pork tenderloin in a large resealable bag or shallow dish.
Pour the marinade over the pork, making sure it is coated on all sides.
Refrigerate for at least 1 hour, or overnight for even more flavor.
3. Sear the Pork
Remove the pork from the marinade and discard the used marinade.
Heat a large oven-safe skillet over medium-high heat and add a small amount of oil.
Sear the pork tenderloin for about 2–3 minutes per side, turning it until all sides are nicely browned.
4. Add the Cranberry BBQ Sauce
Brush the pork generously with another layer of Bigfoot Cranberry BBQ Sauce.
Transfer the skillet to a preheated 400°F oven.
Roast until the pork reaches an internal temperature of 145°F at the thickest part.
Brush with another layer of sauce during the last few minutes of cooking.
5. Rest and Slice
Remove the pork from the oven and let it rest for about 5–10 minutes before slicing.
Cut the tenderloin into medallions and spoon a little extra cranberry BBQ sauce over the top.
Garnish with parsley, green onions, or a few fresh cranberries if desired.
