The Queen of Cakes: How to Bake a Flawless Vanilla Bean Bundt Cake

 



 There is something undeniably majestic about a Bundt cake. With its sculptural curves, elegant flutes, and generous crown of sweet glaze, it occupies a unique space in the baking world. It looks like it belongs in a high-end bakery window, yet it carries the warm, comforting nostalgia of a weekend baking project shared with family.

Unlike layer cakes that require precision stacking and crumb coats, the Bundt cake does all the heavy lifting for you. Its intricate pan does the decorating; your only job is to make sure the inside is ultra-moist, buttery, and packed with flavor.

The Golden Rules for Bundt Cake Success

Before we get to the recipe card, there are two golden rules every baker needs to know when working with a Bundt pan:

1.      The Prep is Everything: The biggest heartbreak in baking is when a gorgeous Bundt cake sticks to the pan. Do not rely solely on non-stick spray! Use a pastry brush to coat every single nook, cranny, and crevice with melted butter or shortening, then dust it thoroughly with flour (or sugar/cocoa powder depending on the cake).

2.     Room Temperature Ingredients: Because Bundt cakes rely on properly creamed butter and sugar to trap air for a great rise, make sure your butter, eggs, and milk are sitting at room temperature before you begin.

The Recipe: Classic Vanilla Bean Bundt Cake

Yields: 1 standard 10-inch Bundt cake (about 12–14 slices)

Prep time: 20 minutes | Cook time: 55–65 minutes

Ingredients

For the Cake:

  • 3 cups (360g) all-purpose flour
  • 1 ½ teaspoons baking powder
  • ½ teaspoon salt
  • 1 cup (2 sticks) unsalted butter, softened to room temperature
  • ½ cup vegetable oil (keeps the crumb ultra-moist for days!)
  • 2 ¾ cups granulated sugar
  • 5 large eggs, room temperature
  • 1 tablespoon pure vanilla bean paste (or pure vanilla extract)
  • 1 cup whole milk, room temperature

For the Vanilla Glaze:

  • 2 cups powdered sugar
  • ¼ cup heavy cream or whole milk
  • 1 teaspoon vanilla extract
  • A tiny pinch of salt (to balance the sweetness)

Instructions

1.      Prep the Pan: Generously grease your 10-inch Bundt pan with melted butter, making sure to brush every detail of the design. Dust with flour, tap out the excess, and set aside.

2.     Preheat: Preheat your oven to 325°F (160°C). Lower temperatures prevent the outside from over-browning before the dense center cooks through.

3.    Whisk Dry Ingredients: In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.

4.    Cream Butter, Oil, and Sugar: In a large bowl or stand mixer fitted with the paddle attachment, beat the softened butter, vegetable oil, and granulated sugar together on medium-high speed for 3 to 4 minutes until pale, light, and fluffy.

5.    Add Eggs and Vanilla: Add the eggs one at a time, beating well after each addition. Mix in the vanilla bean paste.

6.     Alternate Dry Ingredients and Milk: Turn the mixer to low. Add the flour mixture into three parts, alternating with the milk in two parts (starting and ending with flour). Mix just until combined—do not overmix!

7.     Bake: Pour the thick batter evenly into your prepared Bundt pan and smooth the top. Bake at 325°F for 55 to 65 minutes, or until a wooden toothpick inserted into the deepest part of the cake comes out clean.

8.    Cool Properly: Let the cake cool in the pan for exactly 15 minutes. (If you invert it immediately, it may break; if you wait too long, the cooling sugars can glue it to the pan). Gently invert onto a wire rack to cool completely.

9.     Glaze: Whisk together the powdered sugar, heavy cream, vanilla, and salt until smooth. Drizzle generously over the cooled cake, letting it drip down the sides.
