 The Secret to Perfectly Crispy Lemon Pepper Chicken in a Stainless Steel Pan

When used correctly, stainless steel is single-handedly the best tool for creating a shatteringly crispy, golden crust while locking in maximum juice. Today, we’re pairing that technique with bold, zesty lemon and freshly cracked black pepper, finished with a quick pan-deglazing butter sauce.

Ingredients

For the Chicken & Coating:

  • 2 large boneless, skinless chicken breasts (halved horizontally to create 4 thin cutlets)
  • 3 tbsp all-purpose flour (or cornstarch for extra crunch)
  • 1.5 tbsp quality lemon pepper seasoning
  • ½ tsp garlic powder
  • ½ tsp kosher salt
  • 2 tbsp high-smoke point oil (avocado oil, canola oil, or light olive oil)

For the Quick Lemon Butter Pan Sauce:

  • 2 tbsp unsalted butter
  • ¼ cup low-sodium chicken broth
  • 2 tbsp fresh lemon juice (about 1 medium lemon)
  • 1 tsp lemon zest
  • 2 tbsp freshly chopped parsley (for garnish)

Step-by-Step Instructions

Step 1: Prep & Pound the Chicken

Slice your chicken breasts horizontally to create 4 thin cutlets. Place them between two sheets of plastic wrap and gently pound them to an even ½-inch thickness. Uniform thickness ensures even cooking so the edges don't dry out before the center is done.

Step 2: Dredge

In a wide, shallow bowl, whisk together the flour, lemon pepper seasoning, garlic powder, and salt. Pat the chicken pieces dry with paper towels, then press each cutlet firmly into the flour mixture to coat both sides. Shake off any excess.

Step 3: Preheat the Stainless Steel Pan

Set your stainless steel skillet over medium to medium-high heat. Perform the water drop test to confirm it's ready. Pour in 2 tablespoons of oil and swirl to coat the bottom. Let the oil heat until it shimmers.

Step 4: Sear to Golden Perfection

Carefully lay the cutlets into the hot pan. Do not overcrowd the skillet—cook in two batches if necessary.

Let the chicken cook uninterrupted for 4 to 5 minutes. Note: Stainless steel naturally releases protein once a golden-brown crust has formed. If the chicken feels stuck when you try to lift it, give it another 30–60 seconds; it will let go when ready! Flip and cook the other side for another 3 to 4 minutes until the internal temperature reaches 165°F (74°C). Transfer cutlets to a warm plate.

Step 5: Build the Pan Sauce

Reduce the heat to medium-low. Add the chicken broth to the skillet, using a wooden spoon to scrape up all those delicious browned bits (fond) stuck to the bottom. Stir in the fresh lemon juice and lemon zest, simmering for 1 to 2 minutes until slightly reduced.

Swirl in the butter until melted and glossy.

Step 6: Serve

Nestle the crispy chicken cutlets back into the pan for 30 seconds to coat in the warm sauce, or plate the cutlets and spoon the sauce right over top. Garnish with chopped fresh parsley and extra cracked black pepper.
