Chicken Curry




 

Here’s a classic Chicken Curry recipe that you can try:

Ingredients:1 ½ pounds boneless, skinless chicken breasts, diced into 1 1/4-inch cubes
1 ½ teaspoons ground coriander
1 teaspoon ground cumin
½ teaspoon turmeric
½ teaspoon crushed fennel seeds
½ teaspoon ground cinnamon
½ teaspoon ground black pepper
¼ teaspoon ground mustard
¼ teaspoon ground cloves
2 tablespoons olive oil
1 small yellow onion, chopped
4 garlic cloves, minced
1 tablespoon fresh ginger, peeled and minced
1 cup low-sodium chicken broth
¾ cup drained canned diced tomatoes or peeled, seeded, diced fresh tomatoes
Salt and cayenne pepper to taste
1 teaspoon cornstarch mixed with 2 tsp water (optional)
⅓ cup heavy cream
2 tablespoons chopped cilantro

Instructions:In a large skillet, heat the olive oil over medium heat. Add the onion and cook until soft.
Add the garlic, ginger, and spices, and cook for another minute until fragrant.
Stir in the chicken broth and tomatoes, and season with salt and cayenne pepper.
Add the chicken cubes to the skillet and simmer until the chicken is cooked through.
If you prefer a thicker sauce, mix the cornstarch with water and add to the skillet, stirring until the sauce thickens.
Stir in the heavy cream and simmer for a few more minutes.
Garnish with chopped cilantro before serving.
