POACHED EGGS ON NDUJA TOASTS

 


Switch over the avocado toasts, there's a new kid in town! I don't know about you but I've dropped in the bandwagon with the avocado toast, and I sure liked it for one. I toasted all kinds of bread from Italy and slathered the slice in a ripe avocado, then toasted with a light poached egg on top of the toasts. I encountered a picture of nduja toast recently, and I'm addicted now.

 

NGREDIENTS

 

6 Slices Crusty Bread  

Extra Virgin Olive Oil

3 Ounces Nduja at Room Temperature

2 Cups Sautéed Greens  

6 Large Eggs

Salt & Cracked Black Pepper To Taste

 

INSTRUCTIONS:

Toast the slices of bread until golden brown on both sides, then gently spray with extra virgin olive oil.

Spread the nduja over the top of each toasted slice, then divide the spinach on top of each. Bring a big frying pan of lightly salted water and a tablespoon of white vinegar to a boil. Reduce to a boil, then smash the eggs in the pan.

Cook until the whites are fully fried, but the yolks are still going, around 3 minutes. Use a slotted spoon to separate the egg from the water, then put one egg on top of each piece of bread. Drizzle each toast with a little more oil, then season well with salt and cracked pepper. Serve right away and enjoy!
