African
Pancakes are a warm, rich, soft, and delicious mix between crepes and American
pancakes. A fantastic make-ahead breakfast that can be topped with butter,
syrup, or cinnamon sugar!
Ingredients

cups flour
1
1/2 cup milk
1/2-
2/3 cup sugar
6
eggs
1/4
cup melted butter
1
teaspoon vanilla flavor
1/4-
1/2 teaspoon nutmeg
1/2
cup oil optional
Sift the
flour, sugar, nutmeg, and salt. In a large mixing basin, combine eggs and milk
using an electric mixer or by hand. Mix in the flour mixture until everything
is well combined. Finally, add the melted butter.
Allow
the batter to rest in the refrigerator for an hour or longer, or overnight.
Heat
a skillet or nonstick frying pan over medium heat, then gently cover with
vegetable oil, cooking spray, or clarified butter. Then, depending on the size
of your fry pan or skillet, pour about a 1/2 cup of batter. Tilt the pan so
that the batter covers the entire bottom. Cook for about 2 minutes, or until
the bottom is light brown.
Cook
the opposite side after lifting with a spatula. Sprinkle with cinnamon sugar,
powder sugar, or syrup while still hot.
