This platter of Easy Cheese
Enchiladas is the epitome of simplicity.
Ingredients
6
white corn or flour tortillas
3
cups sharp cheddar cheese,
grated
1
can Old El Paso™ enchilada
sauce
1/4
cup jalapeƱos
1/4
cup fresh tomatoes, diced
1/4
cup sliced olives and/or
black beans
1/2
cup sour cream
Preheat the oven to 425
degrees Fahrenheit. Microwave the tortillas until softened. Fill each tortilla
with a third of a cup of cheese. Roll up and place in a 9x11 inch baking dish
coated with nonstick cooking spray.
Ladle the enchilada sauce
from Old El PasoTM over the rolled tortillas. Top with the remaining cheese.
Garnish the enchiladas with
jalapeos, tomatoes, and olives. Bake for 12-15 minutes, or until the cheese is
bubbling, in a preheated oven.
Serve with sour cream and
your favorite rice, beans, or margaritas!
