Christmas green beans are adorned with pimentos and nuts that have been caramelized in butter and honey. A quick and healthful side dish to round up everyone's dinner.
They are always consumed whether they are in a casserole,
cooked with potatoes in a slow cooker, or covered with bread crumbs!
3 tablespoons butter
1 tablespoon honey
1/2 teaspoon minced garlic
1/3 cup chopped pecans
16 ounces frozen fine green beans thawed
1/4 cup diced pimentos
salt and pepper to taste
Melt butter, honey, and garlic in a 12-inch skillet over
medium-high heat.
Add the pecans after the butter has melted. Cook while
stirring constantly, for two minutes, till the pecans are golden brown.
Retrieve the
pecans and place them in a small container.
Stir in the green beans in the same skillet. Cook,
covered, over medium heat for 6-10 minutes, till the green beans are cooked.
Combine the pimentos and toasted pecans in a mixing bowl.
Sprinkle to taste with salt and pepper.
