This cocktail is as easy as it gets and is ideal for all of your holiday gatherings.
juice of 1 lime
8 leaves mint
1 tablespoon sugar
2 tablespoons white rum
1 tablespoon coconut rum
1/4 cup canned unsweetened coconut milk
sparkling water for topping
pomegranate arils for serving
Muddle the lime juice, sugar, & mint leaves in a glass until the
leaves have broken down. Half-fill the glass with ice.
Blend the white rum, coconut rum, and coconut milk in a blender till
smooth. Place over the ice & mix well. To finish, add sparkling water,
mint, & pomegranate.
