Quick and Healthy Avocado Toast with Poached Egg
Perfect for a busy morning or a nutritious lunch, this avocado toast with a poached egg is not only easy to prepare but also packed with healthy fats and proteins.
Ingredients:2 slices of whole-grain bread
1 ripe avocado
2 eggs
Salt and pepper to taste
Optional toppings: cherry tomatoes, arugula, feta cheese, red pepper flakes
Instructions:Toast the bread slices to your preferred level of crispiness.
While the bread is toasting, poach the eggs. Bring a pot of water to a gentle simmer, add a splash of vinegar, and carefully crack the eggs into the water. Cook for 3-4 minutes for a runny yolk or longer for a firmer yolk.
Mash the avocado in a bowl and season with salt and pepper.
Spread the mashed avocado evenly on the toasted bread slices.
Place a poached egg on top of each avocado toast.
Add any additional toppings you like.
Serve immediately and enjoy!
