Grilled Chicken and Vegetables

 



 This grilled chicken and vegetables recipe is a healthy and delicious way to enjoy a summer meal. The chicken is marinated in a simple lemon-herb marinade, and the vegetables are grilled to perfection. This dish is easy to make and can be customized to your liking.

 

Ingredients:

 

For the chicken:

1 pound boneless, skinless chicken breasts

1/4 cup olive oil

1/4 cup lemon juice

2 cloves garlic, minced

1 teaspoon dried oregano1  

1/2 teaspoon salt

1/4 teaspoon black pepper

For the vegetables:

1 onion, cut into wedges

1 bell pepper, cut into wedges

1 zucchini, cut into rounds

1 yellow squash, cut into rounds

Olive oil

Salt and pepper to taste

Instructions:

 

In a large bowl, whisk together the olive oil, lemon juice, garlic, oregano, salt, and pepper. Add the chicken breasts to the bowl and marinate for at least 30 minutes.

Preheat the grill to medium-high heat.

Remove the chicken breasts from the marinade and discard the marinade.

Grill the chicken breasts for 5-7 minutes per side, or until cooked through.

While the chicken is grilling, toss the vegetables with olive oil, salt, and pepper.

Grill the vegetables for 5-7 minutes, or until tender.

Serve the chicken and vegetables hot.

Tips:

 

You can use any type of vegetable you like for this recipe.

You can also marinate the chicken for up to 24 hours.

Beef and Rice Bowl

1 green bell pepper, chopped

Instructions:

Add the green bell pepper, red bell pepper, and peas to the skillet and cook until the vegetables are tender, about 5 minutes.

Stir in the soy sauce, Worcestershire sauce, salt, and pepper.

Add the cooked rice to the skillet and stir until everything is combined.

Serve the beef and rice bowl hot.

Tips:

 

You can add other vegetables to the dish, such as carrots, mushrooms, or broccoli.

Egg Rolls

Ingredients:

 

1 pound ground pork

1/2 cup chopped onion

1/4 cup chopped green onion

1/4 cup chopped celery

1/4 cup chopped carrots

1/4 cup chopped cabbage

1/4 cup chopped water chestnuts

1/4 cup soy sauce

1 tablespoon oyster sauce

1 teaspoon sesame oil

1/2 teaspoon ground ginger

1/4 teaspoon garlic powder

1/4 teaspoon black pepper

1 package egg roll wrappers

Vegetable oil for frying

Instructions:

 

In a large bowl, combine the pork, onion, green onion, celery, carrots, cabbage, water chestnuts, soy sauce, oyster sauce, sesame oil, ginger, garlic powder, and black pepper. Mix well.

Lay out an egg roll wrapper on a flat surface. Place about 1/4 cup of the filling in the center of the wrapper.

Fold the bottom of the wrapper over the filling. Fold in the sides of the wrapper.

Roll the wrapper up tightly, sealing the edges with a little water.

Heat the vegetable oil in a large skillet over medium heat.

Add the egg rolls to the skillet and fry for 2-3 minutes per side or until golden brown.

Remove the egg rolls from the skillet and drain on paper towels.

Serve the egg rolls hot with your favorite dipping sauce.

Tips:

 

You can use any type of ground meat you like for this recipe.

You can also add other vegetables to the filling, such as mushrooms, snow peas, or bean sprouts.

If you don't have egg roll wrappers, you can use wonton wrappers.

You can also bake the egg rolls in a preheated oven at 350 degrees F (175 degrees C) for 15-20 minutes or until golden brown.
