Chicken Flautas are cooked till crispy and loaded with chicken, salsa, and

In a
pan over medium heat, melt the butter; whisk in the flour until smooth. Cook
and toss the onion in the flour-butter mixture for 5 to 10 minutes, or until
softened. Cook and whisk in the black olives, lemon juice, oil, paprika, black
pepper, and salt until heated through, approximately 2 minutes. Remove skillet
from heat and cover with a lid after stirring in the chicken.
In a
big, heavy saucepan or deep-fryer, heat the oil.
Spread
tortillas halfway with the chicken mixture. Wrap the tortilla around the
filling and fasten it with a toothpick.
Working
in batches, fry the rolled tortillas in the heated oil until browned, about 2
minutes. Using a slotted spoon or tongs, transfer the cooked tortillas to a
paper towel-lined platter.
