This is a nice quick dinner or snack for game day!
INGREDIENTS :
1 (1 pound) beef top sirloin, thinly sliced
2 small onions, sliced
2 green bell peppers, sliced
1 cup barbecue sauce
8 (10-inch) flour tortillas
2 cups shredded Cheddar cheese
Heat the oven to 425°F. Cook and stir meat in a pan over
medium heat until brown, 5 to 7 minutes. Cook and stir the onions and green
bell peppers until softened, 5 to 10 minutes. Spread barbecue sauce over the meat
mixture and cook for 10 minutes, or until the sauce is somewhat reduced.
On a baking sheet, place four tortillas and top each with
the meat mixture and Cheddar cheese. Each Cheddar cheese layer should be topped
with a tortilla.
Cook for 10 minutes in a preheated oven, then turn and
cook for another 5 minutes, or until the cheese is melted.
